For this recipe, I used chicken thigh and drumstick, and marinated it for about 8 hours with a honey soy marinade in the fridge, before oven roasting for 25 minutes, until the skin is sticky and crisp. I was delighted to see the happy expressions on my boy's face as he tucked into his drumstick. ;)
Oven-roasted chicken with honey soy sauce
Recipe by Baby Sumo
Preparation time: 5 minutes
Cooking time: 25 minutes
Serves 6
Ingredients
6 chicken maryland, drumstick and thigh separated
For the marinade
1/2 cup light soy sauce
2 tbsp ginger wine
6 tbsp honey
1 tsp coarse black pepper
3 tbsp cooking oil
To serve
Mashed potatoes
Cherry tomatoes
1. Place all marinade ingredients in a bowl, and mix well. In a large tupperware, place chicken pieces and add the marinade and marinate for at least 6 hours in the fridge, preferably overnight.
2. Preheat oven to 200°C (roast mode). Line a baking tray with foil and arrange chicken on tray in a single layer, skin side down. Pour the marinade over the chicken and cook for 15 minutes, then turn over (skin side up) for the remaining 10 minutes and cook until the meat is cooked through and the skin is sticky, and a beautiful golden brown.
3. Remove and serve immediately with some of the marinade leftover in tray as a dip, with mashed potatoes and cherry tomatoes.
