Recipe for Best Chocolate Brownies!

One of our favourite sweet treat is chocolate brownies. My kids go gaga for them! 

Nowadays, I enlist the help of DJ Dan to make this. He really loves making them cos ..well, he gets to enjoy it once we're done. These chocolate brownies are the best ever - moist and fudgy with a slight crust on the outside and pops of saltiness from the Maldon salt flakes. YUM!

Best Chocolate Brownies
Recipe by Baby Sumo, adapted from here
Preparation time: 15-20 minutes
Cooking time: 30 minutes
Makes 16

Ingredients
110g butter
50g good-quality dark chocolate (at least 70% cocoa)
2 eggs, beaten
200g caster sugar
50g plain flour, sifted
1 tsp baking powder
1/4 tsp salt
30g chopped nuts - walnuts, almonds, hazelnuts

Extra chocolate chips, for topping (optional)
A few pinches of Maldon or sea salt


1. Preheat oven to 180°C (no fan).

2. Grease and line a baking tin measuring 8 x 8 inches with baking paper. 

3. Place the butter and the chocolate together in a heatproof bowl and melt over the top of a saucepan filled with simmering water on low heat. Once melted, remove from heat and allow to cool slightly. 

4. Stir in the other ingredients (eggs, sugar, flour, baking powder, salt, nuts) into the chocolate mixture, and then pour into the lined tin. Top with extra chocolate chips and sprinkle some Maldon salt.

5. Bake in the preheated oven for 30 minutes. A skewer inserted in the centre should come out cleanly (but do not overcook).

6. Leave the brownies to cool in the tin for 10 minutes before dividing into 16 squares and transferring them to a wire rack to finish cooling. Enjoy!

Zipping into More Chocolate and Better Wafer with Cadbury

Cadbury Malaysia, under the global food company Mondelēz International, has launched its all-new Cadbury Zip. This delightful snack comes with an improved, mouth-watering new recipe as part of the brand’s strategy to refine their line of products.

With Malaysians staying at home for most parts of the day due to current circumstances, these sticks of goodness can be enjoyed by everyone in the family, used in dessert recipes or even served as the perfect tea time snack to have with friends over Zoom to Zip through dull moments.


 So what’s different with this new Cadbury Zip as compared to its predecessor? The original chocolate base is now replaced with Malaysia’s favourite smooth & creamy Cadbury Dairy Milk. It is also enhanced with 20% more chocolate than before as the new recipe ensures every bite is packed with chocolatey goodness. Not stopping there, Cadbury also developed a recipe to ensure the wafer is consistently crispy to guarantee a satisfying crunch that perfectly complements the chocolate in every bite.

The all-new Cadbury Zip comes in refreshed pack sizes with a striking red ‘Z’ splashed across the iconic purple packaging.

Mandarin Grill at Mandarin Oriental, Kuala Lumpur: New Concept, New Chef, New Menu

Mandarin Grill, the signature restaurant in Mandarin Oriental, Kuala Lumpur recently underwent a month-long renovation and reopened with a refreshed interior and a brand new Italian grill concept.

Taking full advantage of the floor-to-ceiling windows overlooking KLCC Park, the facelift showcases botanical elements in its interior, using light green and turquoise colours as an extension of the lush greenery, bringing the outdoors indoors. With a seating capacity of up to 76 guests, the opulent restaurant features a private dining room and a semi-private dining area that can accommodate up to 12 guests, making it an ideal venue for casual meals and special celebrations.




Helming the culinary team at Mandarin Grill is newly appointed Chef de Cuisine Luigi Stinga, who hails from Naples, Campania in Italy. His culinary journey features multiple roles at renowned Michelin-starred restaurants in Italy such as 1-Michelin star I Salotti and L’Accanto; 2-Michelin star Don Alfonso, Quattro Passi and Il Pellicano; and 3-Michelin star Piazzo Duomo. Prior to joining Mandarin Grill, Stinga worked in 2-Michelin star restaurant Seta in Mandarin Oriental, Milan where he was mentored by Antonio Guida; one of the most celebrated chefs in Italy.



Through his new menu, Stinga hopes to bring exceptional Italian cuisine with a modern approach to discerning guests in Kuala Lumpur. The menu includes some of his signature dishes such as Ravioli Di Baccalá (ravioli with dried salted cod fish, potatoes and oregano), Patate E Prosecco (potatoes with leek and caviar), Spaghetto All’ Astice (spaghetti with romanesco, Boston lobster and bottarga), Agnello E Peperoni (lamb with red pepper, polenta and lamb jus), as well as Tiramisù.

We had the pleasure of sampling the Degustation Menu (RM388, plus RM188 for wine pairing), which features some of Chef Stinga's best and favourite dishes. To start, our server brings us warm, crusty bread served with Ardoino extra virgin olive oil from Italy.

The Variazione di Funghi features six types of mushrooms, including porcini, shimeji, king oyster, oyster, trumpet and button mushrooms, prepared and served in numerous forms. I enjoyed the deep, earthy flavours of this dish, as well as the many different textures of mushrooms.




We both love a good risotto, and the Risotto alla Parmigiana was exactly that. Every spoonful was creamy and full of flavour, with al dente grains of rice and an intense eggplant tomato creme created out of Chef Stinga's love for the classic eggplant parmigiana.




My favourite dish of the afternoon was Chef Stinga's signature, the Ravioli di baccala. The handmade pasta pockets are filled with baccala (dried salted cod fish), and then topped with potato foam and breadcrumbs with parsley. Delicately delicious!




Meanwhile, Hubby loved the Pesce del giorno all'acqua pazza, aka fish of the day. Chef Stinga tells us that he tries to use locally sourced fish whenever possible and that afternoon, he served us a nice snapper fillet. The pan seared snapper is elevated with a beautiful sauce made from a simple combination of tomato, oil, capers and garlic. So yummeh!





For main course, Chef Stinga presents the Agnello e peperoni, lamb loin cooked sous vide for 20 minutes at 64°C and then seared to finish. The beautifully pink lamb was nice and tender and is served with red pepper stuffed with bulgur as well as creamy herb polenta and lamb jus.





And finally for dessert, we had the spectacular Variazione di cioccolato, which utilises two types of chocolate - Valrhona and single origin chocolate locally sourced from Pahang. This rich chocolate dessert is nicely balanced by the smooth vanilla sauce.  Absolutely exquisite!








For weekday lunch, a Set Lunch Menu is available for RM158 per person (3-courses) and RM178 per person (4-courses). The a la carte menu is available for both lunch and dinner, as well as a degustation menu at dinner.

Love chocolate? You're in luck because for the month of April, chocolate is taking the spotlight at THIRTY8's signature weekend affair, High on Sugar. Indulge in all things chocolate, from delicious sweets to savouries and cocoa drinks, with a breathtaking panoramic view of the KL city skyline, including a dramatic full frontal view of the iconic Petronas Twin Towers.

Executive Chef Rolf Knecht is all for supporting local produce as part as Grand Hyatt's sustainability efforts, so the team will be using chocolate sourced from Cameron Highlands in Malaysia, in addition to chocolates from France, Belgium, and his home country, Switzerland.

The Chocolate Buffet will feature over 40 chocolate-inspired recipes, including Swiss white chocolate raspberry cake, Chocolate eclairs, Pahang chocolate banana cake, Hazelnut Belgium milk chocolate cake, and Burnt swiss chocolate cheesecake. There will also be dainty desserts served in shot glasses, “In the glass” station, such as Traditional chocolate mousse, Traditional crème brûlée, Pahang chocolate crème brûlée, Churros, Tropical fruit trifle, and Gula Melaka mousse. Guests can also enjoy gelatos from Whimsical and free-flow tea, coffee, hot chocolate and chocolate smoothies.

Catering to the health-conscious, the guilt-free corner offers a variety of healthy options that are low in calories and high in nutritional value, such as Swiss white chocolate praline with frozen passion fruit, Belgium chocolate raspberry gateau, Sugar-free chocolate mousse, Gluten, dairy and sugar-free chocolate cake and Bon bon jelly.

Furthermore, there will be interactive live stations and chocolate tasting counters, where chefs will explain and provide insights on different local and imported chocolates. Here, you will find the likes of Callebaut from Belgium, Valrhona from France, Felchlin from Switzerland and Avant from Pahang. Using the same chocolate brownie recipe, it was interesting to taste the difference in flavours of each chocolate.

Guests can also order savouries from the a la minute menu; with a few new chocolate-inspired items such as white chocolate baba ghannouj, guilt-free shake salad with salted chocolate nibs and cocoa espresso Black Angus beef meatballs. There will also be Shepherd's pie, Steamed sea bass, Potato puff, Assorted dim sum, Wok-fried carrot cake and more.

Beta KL Grand Opening Party

It was an amazing evening of good food, cocktails and music at Beta KL's Grand Opening Party earlier this week. Guests were treated to canapes (ox tongue, shrimp, mini sliders, winged bean salad and fried chicken), wine, beer, and a Nitro station before the unveiling of Chef Raymond Tham's chocolate masterpiece, Tanah Air which marks the beginning of a new culinary journey for the owners of this restobar.

Guests also embarked on a cocktail pairing, which showcased three of the restaurant's signature dishes (scallops with kangkung, duck pongteh with roti canai wrap and Earl grey chocolate dessert) and delicious cocktails. Thanks to the Beta KL team for having us on this fun evening!
