Recipe: Fried Beancurd Roll (Dim Sum)

These ๐…๐ซ๐ข๐ž๐ ๐๐ž๐š๐ง๐œ๐ฎ๐ซ๐ ๐‘๐จ๐ฅ๐ฅ๐ฌ are something we always order at the dim sum restaurant. Tried my hand at making them at home last weekend in the air fryer and they turned out amazing! The filling is a mix of store bought fish paste, chopped prawns and chives. If you don’t have an air fryer, you can shallow fry them in oil (180°C) for a few mins until golden.

Watch the step-by-step instruction video here:

You can buy the beancurd sheet here: https://shope.ee/9A1ZFVfMVU

Recipe by Baby Sumo
Preparation time: 20-30 mins
Cooking time: 20 mins
Makes 7-8

Ingredients
18g beancurd sheet, cut into 15x15cm sheets (7-8 pcs)
Cooking spray

For the filling
200g premium fish paste
10g chives
4 peeled prawns

For the glue
1 tbsp cornstarch
1 tbsp water

For the mayo dipping sauce
1 tbsp mayonnaise
1 tbsp evaporated creamer
1 tsp honey

1. In a bowl, mix the ingredients for the filling. Then, slap the ingredients into the bowl for about 5 mins, until the filling is sticky and bouncy.

2. Make the glue by mixing the ingredients together. Set aside.

3. Place one beancurd sheet on a flat surface. Using a damp cloth, wipe the beancurd sheet on both sides (wipe at least 2-3 times to remove excess salt. Wiping it will also make it more pliable). Place about one tablespoonful of filling onto the sheet, about 1 cm from the sides and 2cm from bottom. Fold the bottom upwards. Using your fingers, apply glue around the edges and then fold to form a parcel. (watch video here to learn how to fold the rolls). Repeat for other sheets until filling is used up.

4. Spray air fryer with some cooking spray. Place beancurd rolls in a single layer in air fryer, then spray again with more cooking spray. Cook in air fryer at 180°C for 20 mins until beancurd is crispy.

5. Meanwhile, place all ingredients for dipping sauce in a bowl and mix well.

6. Serve the beancurd rolls hot with the mayo dipping sauce. We usually cut each roll into half with scissors.

Tip: Make sure to wipe the beancurd sheets a few times to remove excess salt from the sheets, otherwise it will be very salty.

Recipe: Steamed pork ribs with black bean sauce

Steamed pork ribs with black bean sauce is a dish we would usually order at the dim sum restaurant as well as Chinese dai chow restaurants. You can easily recreate this dish at home; simply marinate ribs in fridge for at least 1 hour and then steam for about 20 minutes. It's that easy!

I made this for lunch last week, and when the boy came downstairs after his online class for his lunch break, he commented "Wow, something smells good today mummy!" That's how I knew I was on to a winner, a dish that my family would love eating. And true enough, they loved it!

Steamed pork ribs with black bean sauce

Steamed pork ribs in black bean sauce
Recipe by Baby Sumo
Preparation time: 5 minutes(+1 hour marinating time)
Cooking time: 20 minutes
Serves 4

Ingredients
500g pork ribs, cut into 3-4cm length

For the marinade
1 tbsp cooking oil
1 heaped tbsp salted black bean
1 tbsp Shaoxing wine
1 tbsp cornstarch
1/2 tsp salt
1/2 tsp brown sugar
3 cloves garlic, finely chopped
1 tbsp grated ginger

For garnish
1 large red chilli, sliced
1 spring onion, green part only

1. Mix marinade in a bowl. Marinate pork ribs for at least 1 hour, in the fridge.

2. Bring water to the boil in a steamer over high heat. Place ribs in a heatproof plate in a single layer, along with red chilli and steam for 20 minutes over high heat.

3. Garnish with spring onions and serve with rice.

Sofitel Kuala Lumpur Damansara: Frozen Dim Sum Delivery

One of the things we miss having during this MCO period is dim sum. Last week, we finally had a lovely yum cha brunch in the comfort of our home, thanks to the frozen dim sum delivery we received from Sofitel Kuala Lumpur Damansara.

Yes, Sofitel Kuala Lumpur Damansara is now offering Frozen Dim Sum from their Chinese fine dining restaurant, Wan Chun Ting, as part of their enhanced Takeaway Menu. Furthermore, you can also enjoy complimentary delivery within 10km radius from the hotel.

Xin Dau Ji Malaysia ๆ–ฐๆ–—่ฎฐ: One-Michelin Star Restaurant from Hong Kong!

Xin Dau Ji is a renowned 1-Michelin star Chinese restaurant hailing from Hong Kong. Earlier this year, Duke Dinings Sdn Bhd, a wholly-owned subsidiary of Ekovest Berhad brought this brand to Malaysia, so more Malaysians can have a taste of authentic Cantonese cuisine that the restaurant offers.

Established in 1972, Xin Dou Ji (ๆ–ฐๅ…œ่ฎฐ) was one of Hong Kong’s most famous brands. During the 1970s, it was well-loved by the locals for its classic nostalgic Cantonese and seafood cuisine and was often patronised by many Hong Kong superstars, including the well-known singer, Leslie Cheung. The brand closed down with the passing of its owner, Mr Dou, however due to demand from the locals, Xin Dau Ji (ๆ–ฐๆ–—่ฎฐ) was reopened in 2006 with a brand new name, with most of the previous crew on board to resurrect the old signature taste. In 2012, the Jordan and Tai Wai outlet both received its first Michelin star.

Xin Dau Ji Malaysia is located at the Lower Ground Floor of EkoCheras Mall, featuring over 11,000 square feet of dining space, with approximately 30 tables and 8 VIP rooms. The private rooms are  named according to the locations of the Xin Dau Ji outlets from Hong Kong, Macau and Shanghai, with two of them equipped with karaoke facilities.

In Cantonese cuisine, the taste must be well-balanced, non-greasy and light in flavour. Spices should be used in modest amounts to avoid overwhelming the flavors of the primary ingredients, and these ingredients in turn should be at the peak of their freshness and quality. To maintain a truly authentic flavour, the kitchen here is also helmed by professional head chefs from Hong Kong.

The House special roasted goose (RM328 for whole, RM168 for half, RM88 for quarter) is one of the signature dishes from Xin Dau Ji. The goose, which is sourced from Qingyuan, China, is marinated, poached and then dried overnight to ensure that the skin crisps up beautifully. Finally, it is roasted in the oven for 45 minutes to 1 hour and served immediately to the guests, as goose is best enjoyed when hot. Pre-order is highly recommended as there are limited quantities available daily. A rich, sinful dish that we enjoyed, especially the amazing, delicate crisp skin eaten with the sour plum sauce.

This is perhaps the best version of sweet and sour pork that I've had. Here at Xin Dau Ji, they use marinated spare ribs which are coated in a light batter and deep fried to crispy perfection, before coating evenly with their homemade sweet and sour sauce.

Sweet and sour spare ribs (RM48)

My personal favourite dish here is the Pan fried seafood paste with scallops (RM78). Light in flavour, the egg white sauce complements the seafood paste and Australian scallops, without overwhelming their sweet, natural flavour.

One of the more robust dishes here is the Braised lettuce in claypot (RM38). The lettuce is braised with prawn paste, minced pork and dried fish in a claypot - great to go with rice.

During lunch, Xin Dau Ji also offer HK-style dim sum. There are over 35 types of dim sum to choose from; the kids absolutely loved the House special crystal shrimp dumpling (RM15) and Steamed pork dumplings with crab roe (RM15).

For dessert, we had the freshly baked Egg tarts (RM12), Mango pudding (RM10) and Sweetened taro sago (RM10). Their Deep fried glutinous rice balls are rather unusual, as they come with a custard cream and salted egg yolk molten filling, reminiscent of a lau sar pau.

Opening times: Lunch 11am - 3pm, Dinner 5.30pm - 10.00pm.

Location: Xin Dau Ji, LG Floor, LG 19-23A, EkoCheras Mall, 56000 Kuala Lumpur, Malaysia. (Park in mall RM1 on weekdays, RM2 on weekends).
