Recipe: Chunky Vegetable Soup (Using Leftover Turkey)

So the first thing I made after making the turkey stock was this - chunky vegetable soup! We've been experiencing a slew of rain recently, so soups are perfect for those cooler evenings. 

Once you have your rich, flavorful turkey stock, you just need to add in your choice of vegetables - potatoes are a good choice as it helps thicken up the soup. I also added carrots and zucchini, and simply season with some salt and black pepper. You can also add in some of the shredded turkey to the soup to make it more substantial. That's one tasty, warming soup! You can serve the soup with crusty bread, or if you have leftover turkey meat, make some turkey sandwiches to go with your soup.

For the turkey sandwiches, lightly butter and toast your buns. Then, add your turkey (cold or you can heat them up slightly in the pan with some leftover gravy) and a dollop of cranberry sauce.

Chunky Vegetable Soup (Using Leftover Turkey)
Recipe by Baby Sumo
Preparation time: 5 minutes
Cooking time: 30-40 minutes
Serves 4


Ingredients
1.2l turkey stock (recipe here)

1 carrot, cut into chunks
2 potato, cubed
1 zucchini, sliced then halved
150g leftover turkey meat, shredded


1. Place turkey stock with potato in a pot and simmer for 20 minutes over medium heat. 

2. Add carrots and zucchini and cook for further 10 minutes. 

3.Using a masher, roughly mash the potatoes and carrots. This will help thicken the soup.

4. Add leftover turkey meat. Season with salt and pepper. Serve with crusty bread or sandwiches.

Note: I have shredded all the leftover turkey meat and placed them in tupperwares (in the freezer), about 300g each and take them out of the freezer whenever I need them.

Recipe: Leftover Turkey Stock

Who had turkey for Christmas this year? Do you have lots of leftovers from the meal and not quite sure what to do with them?

Well, waste not. You can shred the meat off the turkey and store them in individual tupperwares in the chiller or freezer. And the turkey carcass - don't throw that away either. You can use it to make a really nice and rich turkey stock, which you can use for making soups, noodles, risotto and more. From one turkey carcass, I managed to make about 4l of turkey stock. Not bad at all!

How to Make Turkey Stock

Ingredients
Leftover turkey carcass (from a 4-5kg turkey)
4 - 5l water
2 bay leaves
2 cloves garlic, crushed


1. Remove meat from the turkey and shred and store in tupperwares. 

2. Place turkey carcass, bay leaves and garlic in a large pot with water. Boil carcass with water over medium high heat for 2 to 3 hours, until stock is a rich, milky colour.

3. Allow to cool, then place stock in glass jars. The stock will keep well in the fridge for 3-4 days or in the freezer for up to a month.

I am very thankful for all the time and memories I got to have this year with my family, especially BabySumoKids who have been online schooling for the most part of 2020. While many parents dreaded online learning, I think both kids did very well and made us proud and I really enjoyed having them at home with us.



While we did not get to go out or travel as much this year, we still had lots of fun together (indoor camping, making YouTube vids, baking, playing in the pool, playing games, watching movies).. I guess what I'm saying is we enjoyed it as best as we could, together. 


And of course, we are thankful for all the good food that we still managed to have this year despite the pandemic - thanks to all who sent us food deliveries to review. Also I have been able to take my cooking skills to the next level and putting good food on the table for the family.



We would like to take this opportunity to wish everyone good health and happiness for the coming year, stay safe and we will get through this pandemic together.

Recipe Video: Among Us Tang Yuan

Happy Winter Solstice everyone! This year, we made two types of tang yuan during the Dongzhi Festival - the traditional "round" tang yuan as well as "Among Us" tang yuan. Among Us is a popular mobile game which BabySumoKids love!

Among Us Tang Yuan (glutinous rice balls)
Recipe by Baby Sumo
Preparation time: 20-30 minutes
Cooking time: 20 minutes
Serves 4

Ingredients
200g glutinous rice flour
200ml water

Food colouring of your choice (blue, pink, green, yellow)


For the syrup
800ml water
3 pandan leaves, knotted
50g gula melaka (palm sugar)
2 inch ginger, sliced and crushed

To garnish
1 pandan leaf, cut into half and into 1 inch long and then knotted

Condiments
50g roasted peanuts, crushed


1. First, make the syrup. Add water, old ginger, pandan leaves, and gula melaka to a pot and bring to a boil. Simmer over medium heat for 15-20 minutes and remove from heat.

2. Place the glutinous rice flour into a large bowl. Gradually add water to form a stiff dough. Add more water or flour as required. 

3. Divide dough into a few portions, depending on how many colours you would like to make. Add a few drops of food colouring. Roll each firmly into the size of a marble ball. Place rice balls (Tang yuan) onto a plate.

4. For the Among Us tang yuan: Roll some dough into a ball. Press down using your finger, and then push up the bottom centre to form a "tooth" shape. Use some blue dough to make an oval glass.

5. Bring a saucepan of water to a boil. Put in the tang yuan and cook until they float to the surface. Remove with a slotted spoon and place in a bowl. Spoon over ginger syrup. Garnish with a mini knotted pandan leaf. Serve with crushed peanuts.

Over the weekend, we visited the transformed Shook! for an evening out with the family. The restaurant is ultra spacious, and we're totally loving the snazzy interior.We were also serenaded by a pianist as we enjoyed our meal here.

Here are some of the dishes which we sampled here:

My personal favourite was the Miso Lobster Linguine; pasta topped with miso-marinated fresh rock lobster, spring onion, garlic oil, ikura and chilli flakes. So yum!



Rich and smooth seafood chowder, with added texture from the crispy nori crackers and charred sweet corn. And decadent it sure was!


A trio of satay skewers - chicken, lamb and beef, marinated with spices and grilled on an open coal fire and served with a chunky peanut sauce.



You can never go wrong with fried chicken - coated in a blend of flour and spices, and fried in a custom-made tri-ply pot to draw out the flavour and tenderness.



The thin-based pizza was excellent too, featuring Chef Willie’s house-made beef pepperoni, shredded oregano and mozzarella on a base of rich agnolotti sauce.

Recipe: Cucumber Chive Kimchi (Oi Kimchi 오이김치)

This Cucumber Chive Kimchi (Oi Kimchi 오이김치) is my all-time favourite kimchi. It is also one of the quickest and easiest kimchi you can make at home. The regular cabbage kimchi usually takes 3 days to ferment before you can eat it, but you can make this and eat it on the same day. 

The first time I had this was at Shinmapo, served as ban chan (side dish) to our Korean BBQ meal. I make this at home whenever we have Korean food at home. This kimchi usually consists of cucumber, garlic chives and onion, however I omit the onion when I make it at home since I prefer it without. The recipe is quite flexible - adjust gochugaru or fish sauce according to how spicy or salty you like it. It is recommended to set the kimchi aside for at least two hours before consuming. Cucumber Chive Kimchi (Oi Kimchi 오이김치)
Recipe by Baby Sumo, adapted from here
Preparation time: 5 minutes 
Serves 4

Ingredients
1 Japanese cucumber
3-4 stalks garlic chives, cut into 1 1/2" lengths
1 tsp sea salt
1 tbsp gochugaru (Korean red pepper powder)
1 tbsp grated (or pureed) pear
1/2 tbsp honey
1 clove garlic, minced
1/2 tsp fish sauce

1. Cut the cucumber to 1 to 1 1/2 inch lengths. Halve and then cut into three parts for each half. Place cucumber and chives in a bowl and sprinkle over salt. Set aside for 30 minutes.

2. In a separate bowl, add the gochugaru, grated pear, honey, garlic and fish sauce. Mix well. Add the cucumber and chives to the mixture and set aside at room temperature for at least 2 hours before consuming.  

Note: 
1. Add more fish sauce if you like your kimchi to be saltier.
2. There is no need to rinse the salt off the cucumber (after Step 1).
