evian® Collaborates with Michelin-Starred Chefs Arnaud Dunand Sauthier & Darren Chin for an Exquisite Four-Hands Gastronomic Experience

evian® Collaborates with Michelin-Starred Chefs Arnaud Dunand Sauthier& Darren Chin for an Exquisite Four-Hands Gastronomic Experience
evian® Natural Mineral Water and evian® Sparkling Water complement and celebrate a culinary partnership of global flavours, French flair, and infused with Malaysian soul

In an extraordinary fusion of culinary skills and impeccable craftsmanship, evian® the iconic bottled natural mineral water from the heart of the French Alps recently joined hands with Chef and evian® Ambassador Arnaud Dunand Sauthier and renowned Chef Darren Chin of DC restaurant for an exclusive four-hands dining experience, indulging eighty privileged Malaysians with an unforgettable evening.

The culinary partnership which promised an unforgettable evening of French sophistication and bold Malaysian flavours did not disappoint, with each dish thoughtfully accompanied by evian® Natural Mineral Water and evian® Sparkling Water, enhancing the sensory experience without overshadowing the delicate balance of flavours. Each dish from the exquisite menu showcases the Chefs’ combined culinary artistry and unique culinary backgrounds in a collection that champions the elegance of French cuisine and the vibrance of local Malaysian ingredients.

In crafting the menu, Chef Arnaud Dunand dug into his roots, the mountains of Savoie Region, France set in the midst of the French Alps while Chef Darren Chin contributed the Malaysian soul to the unique menu. Reflecting on the partnership, Chef Arnaud Dunand said, “This collaboration with Chef Darren Chin and evian® allowed us to transcend boundaries and create an experience that celebrates our shared passions. Evian®, with its unique purity, successfully elevated the overall tasting experience and brought out the authenticity of each ingredient, reminiscent of the purity of my childhood in the French Alps.”

The evening’s culinary highlights showcased an exquisite array of dishes:
· Snow Crab paired with shellfish and broad beans, setting the tone for the evening with a refined yet fresh start
· Banana Blossom, an innovative creation featuring aged banana vinegar served with gambero rosso and roasted coconut, bringing forth an explosion of harmonious fusion of textures and flavours
· Sophistication of Caviar, balanced with potato and uni
· Songkhla River Prawn with yellow curry bisque sauce paired with Langit black rice salad, bridging local ingredients with refined French techniques
· Succulent Irish Duck with zucchini and olives.
· A beautiful dish of Violet, with smokey sweet potato with brown butter honey, preceded the final indulgence.
· The culmination of the meal comes in a course of Extraordinary Chocolate with Patrick Roger, a decadent selection of light chocolate siphon mousse, shiitake chocolate ganache and black sesame streusel, providing a fitting grand finale to a sublime evening.

“It was an honour for DC Restaurant to host this unique collaborative effort between evian®, Chef Arnaud Dunand and myself. The one-of-a-kind fusion dishes that we created were an astounding success, judging from the numerous feedback we received from our guests over the two nights. Together, we created dishes that were not only a testament to our respective culinary philosophies, but were elevated by the subtle, crisp character of evian® Natural Mineral Water and refined evian® Sparkling Water. These waters complemented our creations and added that spark which brought our dishes to the next level,” said Chef Darren Chin.

evian® Natural Mineral Water and evian® Sparkling Water complemented perfectly the creations by both Chefs. evian® Natural Mineral Water gave a delicate, fresh, neutral and crisp taste while evian® Sparkling’s unique water profile provided a taste sensation that was refreshing. With the finest fizz and lowest sodium content, evian® Sparkling Water allowed the Chefs to showcase their creations without other interventions such as a very pronounced taste of the water.

This exclusive dining experience was a showcase of culinary prowess, as well as a celebration of the art of pairing – where the purity of evian® water allowed the chef’s creations to truly shine.

Sunday Sky Brunch at Sabayon, EQ Kuala Lumpur

Elevate your weekend with the Sunday Sky Brunch at Sabayon, the award-winning fine dining restaurant in EQ Kuala Lumpur. Located on the 51st floor of the hotel, immerse yourself in a luxe lunch complemented by spectacular panoramic views of the city and stellar service.

Sabayon, usually an adult-only dining establishment, welcomes young children on Sundays, offering a 2-course menu for them, taking into account their appetites and preferences. For the adults, a 4-course meal consisting of an entrée, starter, main course and dessert awaits.

Start your meal on a high note with entrée options such as Tuna crudo, Eggplant & rock melon, or Hokkaido oyster in panko crumbs, served with pea custard and yuzu gel and salmon roe. Apart from the Hokkaido oyster, we tried everything on the menu and was delighted with the overall quality of the menu.

We absolutely loved the Tuna crudo, nori and sesame crusted tuna topped with ikura (salmon roe) and sesame vinagrette served with with a pea crisp. Hubby was equally impressed with the Eggplant & Melon, which showcased different textures and flavours.

Starter options include Butternut risotto, Veal tartare, or Seared Hokkaido scallops with roasted cauliflower puree. The pumpkin risotto was perfectly al dente, served with batons of sweet miso glazed squash. The veal tartare, sandwiched between compressed apples was served with apple foam and caramelised onions. I had the Hokkaido scallops, lightly seared and served with cauliflower puree, shaved cauliflower and tonburi.

For the main course, diners can choose between chicken, beef or salmon trout. The Corn-fed chicken terrine with black truffle was a pleasant surprise, and we were happy that we did not give this a miss. Tender chicken with crisp skin, a delicious sauce au supreme and black truffles to further elevate the dish.

The braised beef brisket was fork tender,  and comes with silky smooth pomme puree and a noisette lemon emulsion.  The salmon trout was pan seared to perfection,  served with beurre blanc, asparagus, and avruga caviar... this is truly simplicity at its best.

End your meal with a selection of cake and pastries, or a cheese platter featuring a selection of imported cheese, honeycomb, and other accompaniments.

At the end of the meal, the wait staff presented us with a framed family photo as a memento of our wonderful dining experience here at Sabayon. One of the best Sundays we have spent together this year for sure.

For the two-course child brunch, young guests can choose from tomato soup or French toast as a starter, as well as steak hache with mashed potatoes and onion gravy, creamy linguine pasta, or fish and chips with mushy peas and house-made tartare sauce as the main. Dessert is a choice between strawberry parfait, chocolate tart with vanilla gelato, or a sorbet duo.

The 4-course adult brunch is priced at RM189+ and the 2-course child brunch is priced at RM68+.
Sunday Sky Brunch is available only on Sundays, from 12pm to 3pm. Reservations are highly recommended, and can be made via the EQ F&B reservations WhatsApp at +6012-278 9239.

Sage Restaurant & Wine Bar, KL: Dinner Menu

Whether you are out for a romantic evening or to celebrate a special occasion with your loved ones, Sage Restaurant & Wine Bar provides the perfect ambiance for a special night, with fantastic food and service to match.

For weekday dinner, the restaurant offers a Tasting Menu (RM228 nett) whereby diners can choose 2 appetizers and dessert or main course and dessert; Sage Menu (RM278 nettt) for appetizer, main course and dessert, or a  4-course Chef's Special Menu (RM338 nett).

We went for the Chef's Special Menu which comes with 2 appetizers, main course, dessert, coffee/tea and a complimentary glass of wine.  On Saturday evenings, diners can enjoy a 4-course menu along with complimentary glass of wine AND choice of single malt or whisky for RM298 nett.

Our evening begins with Chef Daniel's signature appetizer - the Hotate with caviar, with a cold truffled potato and leek vichyssoise. Beautifully delicate, it was an amazing start to our meal here.

For the remaining three courses, you can choose from a luxe selection of French-Japanese appetizers, mains and desserts.

Appetizer

Thin sliced Wagyu Rump with Shaved Truffle and Chives - simply wow! The Wagyu carpaccio was melt-in-the-mouth delicious, elevated further with shaved black truffles and truffle oil.

Somen Noodle with Botan Ebi, Hokkaido Uni and Wasabi Aioli - the Japanese influence in this is undeniable. Served cold, I especially loved the fresh sweet prawn and creamy Hokkaido uni (sea urchin).

Seared Duck Foie Gras with Sea Scallop, Avocado and Goma Tuile - two of my favourite things in one dish. The scallop was impressively huge and juicy, perfectly complemented by the luscious foie gras and creamy avocado slices.

Royale of Tarabagani with Abalone and Ohba Broth - our daughter, the soup lover, savoured every spoonful of this light, flavorful dish. Made ultra luxurious with the sliced abalone and red king crab and silky smooth egg custard.

Palate cleanser

Main Course

Wagyu Score 6 Striploin and Yuzukoshou - beef lovers, this is not to be missed! Beautifully seared and cooked to medium perfection, topped with Wagyu fats and served with zucchini and grilled asparagus, beef jus, and yuzukoshou. So so good!

Glazed White Cod with Tiger Prawn and Crustacean Oil -
firm, flaky cod fish with sweet delicate flesh and crispy skin served with two large tiger prawns and local king vegetables (sayur raja).

Beef Rossini with Foie Gras and Red Wine Sauce -
since there were already two orders of the Wagyu from our table, I decided to try another beef dish from the menu. The beef rossini, consisting of a tender, chunky piece of filet mignon, again cooked to medium perfection, is topped with foie gras (one can never have too much foie!) and a red wine sauce.

Dessert

Blue Cheese Panna Cotta with Vanilla Ice Cream - wobbly creamy goodness with a touch of blue cheese for extra oomph.

Kahlua Torte with Mascarpone Cheese Mousseline and Tia Maria Ice Cream -
rich and moist chocolate torte laced with Kahlua.

Chef Daniel’s Soufflé: - Grand Marnier, Chocolate, Calvados, Cointreau or Wasabi - the kids went for the chocolate souffle and they loved it! Light and airy, the stuff of dreams.

Good news!

Sage Restaurant & Wine Bar, KL: Craftsman Menu

Sage Restaurant & Wine Bar is no stranger to the KL fine dining scene. Under the helm of Chef Daniel Cheong, this stalwart is still going strong after more than 10 years in operation and is well-loved for its elegant, refined French-Japanese cuisine.

Earlier last week, we went to Sage for a spot of daytime dating while the kids were in school. Just like the good old times! Service is still excellent as ever, with all SOPs and social distancing adhered to. Currently for lunch, they offer a 4-course Lunch Set Menu (RM150) and 5-course Craftsman Menu (RM298). We went for the Craftsman Menu, which comes with more premium ingredients such as Wagyu and foie gras as well as a complimentary glass of red or white wine. Similar to the lunch set menu, the Craftsman Menu also changes on a weekly basis - first released as the Plat Du Jour menu every Saturday for dinner, and then served throughout the week as the lunch Craftsman Menu.

To start, Chef Daniel always serves one of his signature cold appetizers. A deceptively simple soba served with thin slices of kombu-jime shima aji with a dash of their divine truffle soy. So exquisite... one of my all-time favourites! While waiting for our next course, we enjoyed their freshly baked breads with the signature basil dip and sipped on their welcome "virgin mojito" drink.

The next appetizer, is a luscious slab of pan seared foie gras with Muscat grape and red wine reduction, followed by a palate cleanser of zesty Bentong Ginger and wild honey sorbet.

For mains, diners have a choice of three different dishes to choose from - usually a selection of fish, lamb or beef. We both went for the Australian Wagyu striploin with chasseur sauce. Simply irresistible, the Wagyu was cooked to perfection... every mouthful a delight to savour.

For a sweet end to our meal, we had the Belgium white chocolate torte with white truffle ice cream (which is totally amazing btw!) with your choice of coffee or tea.
