Recipe: Tiger Stripes German Cookies

German cookies is one of our must-have CNY cookies. Since it's the Year of the Tiger, we got the idea of making these Tiger Stripes German Cookies. It's simple and quick, and looks the part. If you have 45 minutes to spare, then go ahead and make some for Chinese New Year.

Tiger Stripes German Cookies
Recipe by Baby Sumo
Preparation time: 30 minutes
Cooking time: 16 minutes (per batch)
Makes about 70 (or fills 2 tubs)

Ingredients
188g butter, softened at room temperature
60g icing sugar, sifted
188g potato starch/flour, sifted
120g plain flour, sifted

For the tiger stripes
1-2 drops orange food colouring
1-2 drops black food colouring
1 tbsp water


1. Preheat oven to 170°C (no fan). Line 2 baking trays with greaseproof paper.

2. Using an electric mixer, beat the butter and icing sugar until light and fluffy, about 5 minutes.

3. Add the potato starch and plain flour, and mix to form a soft dough. You should be able to pinch off some with your fingers and roll into a ball without any sticky residue. If it's too sticky, add an extra tablespoon of potato flour. 

4. We made half regular German cookies and half Tiger Stripes German Cookies. Divide the dough into half. 

5. For the regular German cookies: Roll into small balls (about 2-3cm diameter), arrange on the baking tray and press lightly with a fork to flatten and make indentation, dipping the fork in water after each press to prevent the cookie dough from sticking to the fork.

6. For the Tiger Stripes German Cookies, add the orange food colouring to the dough and mix for 10 seconds until well incorporated. Roll into small balls as above and place on baking tray. In a small bowl, add 1 tbsp of water and 1-2 drops of black food colouring. Dip your fork into this black colored water and flatten the German cookies to make "stripes" indentation.

8. Bake in preheated oven for 16 minutes.  Allow to cool on baking tray and store in a tupperware once cooled.

Note: 
1. These cookies taste best after they have been stored for at least 24 hours.
2. If you do not have orange colouring, you can use pink + yellow food colouring at 1:1 ratio (ie 1 drop pink and 1 drop yellow food colouring).

Recipe: Vegan Scallops with Sweet Peas

During Chinese New Year, scallops are often served, as it is an auspicious ingredient which symbolises new opportunities for the new year. 

Stir fried scallops with sweet peas is one of my favourite ways of serving scallops (recipe here). This year, I've created a vegetarian version to serve on the first day of CNY 2022 (we're vegetarians on the first day). The mock vegan “scallops” are created using king oyster mushroom which has a great meaty texture. I have to say they really do look like real scallops and tastes great too. Sweet peas and carrots pair well with scallops, and they are auspicious too - symbolising both unity and good luck.

Preparation time: 10 minutes
Cooking time: 15 minutes
Serves 4

Ingredients
For the vegan “scallops”
200g king oyster mushroom
1 tbsp cooking oil
1-2 tbsp salted butter
Salt
Freshly ground black pepper
1 tbsp cooking sake

For the veggie stir fry
130g sweet peas, ends trimmed
5-6 carrot slices, cut into flower shapes
1 tbsp shallot oil
1tbsp water
1/2 tsp mushroom or vegetarian stock powder

1. Trim the ends off the mushroom. Cut into 2-3cm pieces from the stalks.

2. Using a knife, cut cross lines on the mushroom. Watch the video in this post to learn how to cut the cross lines.




3. Melt butter with oil in a pan. Pan fry the mushrooms until golden, then flip, and repeat for other side. Once both sides are golden, add cooking sake and season with salt and pepper, cover and cook for a further min.

4. Heat shallot oil in another pan. Add sweet peas and carrots, along with water and seasoning and sauté for 2-3 mins.

5. Plate and enjoy!

How to Make Tiger Origami for Year of the Tiger (CNY 2022)

Every year, my kids would make zodiac animal origami which I will use as Chinese New Year decorations around the house. This year (CNY 2022), we will be ushering in the Year of the Tiger. Here is a very simple and cute tiger origami which you can try making at home.

All you need is: 15cm x 15cm orange craft paper, Black marker pen.

Recipe: Fu Gui Choy with Braised Mushrooms and Carrot Flowers

Chinese New Year is just one week away now. Time to stock up on auspicious ingredients for your reunion dinner and CNY meals. You may have seen this vegetable, Fu Gui Choy or Fu Gui Cai (富贵菜) in the supermarkets or on online supermarkets; they usually only make an appearance during the CNY festive period.

Fu Gui Choy 富贵菜 translates as Prosperity Vegetable in English, plus it looks really beautiful on the plate. Other than that, mushrooms symbolises longevity while carrots symbolises good luck. So, all in all, a very auspicious vegetable dish to serve during CNY.

Here’s an idea on how you can serve it:


Fu Gui Choy with Braised Mushrooms and Carrot Flowers
Recipe by Baby Sumo
Preparation time: 5 minutes
Cooking time: 15 minutes
Serves 4

Ingredients
1 Fu Gui Choy, kept whole
5 Chinese mushrooms
1 cup water
Vegetarian oyster sauce, to taste (about 1 tbsp)
1/2 tbsp Shaoxing wine
A few dashes white pepper
1 clove garlic, sliced
1 tbsp cooking oil
5-6 carrot slices, cut into flower shapes
5 Goji berries, soaked in water for 10mins

1. Soak and rinse the fu gui choy in water 3-4 times to remove dirt.

2. In a small saucepan, heat oil and sauté garlic for 2 mins. Add mushrooms and water, and season with vegetarian oyster sauce, white pepper and Shaoxing wine. Braise over low heat for 10-15 mins.

3. Fill a wok 3/4 full with boiling water. Add 1 tsp salt and 1 tbsp of oil. Blanch carrots for a min. Remove. Blanch Fu Gui Choy for 2-3 mins, until cooked.

4. Place fu gui choy on a plate. Arrange mushrooms and carrots, and pour the braising liquid over the vegetable. Garnish with goji.

Note:
1. If serving this on the 1st day of CNY as a vegetarian dish, you can omit the garlic.
2. I wanted to keep the vegetable as a whole floret for beautiful presentation. When eating, you can use scissors to remove the stalks from the bottom stem that's holding them together.

Recipe: Salted Egg Yolk Cornflakes (Using Powder)

Chinese New Year is just around the corner, which means it's time to get productive in the kitchen and whip up some of our favourite CNY snacks.

Making my favourite snack, salted egg yolk cornflakes, is now easier and more convenient than ever. Using salted egg yolk powder, I can skip a few steps and besides I can get the powder easily at the supermarket or online (during CNY, salted eggs can be pretty scarce).   

These took me about 20 minutes in total to make, super easy! Once you start munching on them, it's hard to put the tub down - they're super addictive!

Salted egg yolk cornflakes recipe



Salted Egg Yolk Cornflakes (Using Powder)
Recipe by Baby Sumo
Preparation time: 2-3 minutes
Cooking time: 15 minutes
Makes 3 tubs

Ingredients
275g cornflakes
150g salted butter
20g curry leaves, washed and removed from stalks
5 cili padi, seeds removed and finely chopped
50g caster sugar
1/2 cup + 2 tbsp salted egg yolk powder (buy here)


1. In a large wok, melt the butter over medium heat. Once melted, add the curry leaves, chopped chillies and sugar and allow to cook, stirring frequently, for about 2 minutes, until sugar has dissolved.

2. Add the salted egg yolk powder and stir well. 

3. Add the cornflakes, and use two spatulas to mix well, ensuring the cornflakes are coated well with the salted egg yolk-butter mixture.

4. Preheat oven to 180°C (no fan). Divide the cornflakes onto two trays and place into preheated oven and bake for 6-10 minutes, until golden brown and crisp. Please keep an eye as you do not want to overbake it.

5. Allow to cool for about 10 minutes, and then place immediately into airtight containers.

Year of the Tiger Yee Sang (CNY 2022)

This Chinese New Year, we welcome the Year of the Tiger. As previous years, together with my kids, we designed a Tiger Yee Sang using fresh fruits and vegetables to commemorate this special occasion. 

Let’s “lou” to a healthy and prosperous new year!

Tiger Yee Sang




What you will need:
Carrot : for tiger face and ears
Radish: for tiger face
Roasted seaweed: for tiger stripes/eyes
Cucumber: whiskers
Pineapple: sun
Lettuce
Pear
Strawberry hearts
Condiments: crushed peanuts, crackers, dressing (2T EVOO, 1T white balsamic vinegar, 1T honey)
Optional: salmon sashimi, abalone, Bak kwa, scallops, smoked duck, lobster.

‘Warning Letter’ Scams



With regard to this ‘warning latter’ scam (as shown in the screenshot above) misusing our INTERSPACE group and ACCESSTRADE company name/logo as well as fake signatures of our management, which was reported by Singapore internet users earlier in November 2021, we would like to announce that ACCESSTRADE only sends emails and information through ACCESSTRADE official accounts. We will NEVER send emails including signatures of ACCESSTRADE staff or merchants to individual internet users.


‘Part-Time Job’ Scams




As shown in the screenshots, there are fake ‘part-time job’ opportunities that misuse our INTERSPACE group and ACCESSTRADE company name/logo being offered online as well. This is similar to the previous scam that we have encountered.

Also, please note that currently we do not have any mobile applications being offered for the public’s usage, nor do we require any sort of payment from our publishers under any circumstances.

Seafood Jamboree @ Golden Valley KL

Seafood lovers, have you heard of the Seafood Jamboree from Golden Valley KL? 

The Seafood Jamboree, priced at RM 148 for small (2 -3 pax) and or RM278 for large (4 - 6 pax), consists of a plethora of treasures from the ocean such as fresh mud crabs, tiger prawns, clams, mantis prawns, squid and fish cakes.
