These ๐ ๐ซ๐ข๐๐ ๐๐๐๐ง๐๐ฎ๐ซ๐ ๐๐จ๐ฅ๐ฅ๐ฌ are something we always order at the dim sum restaurant. Tried my hand at making them at home last weekend in the air fryer and they turned out amazing! The filling is a mix of store bought fish paste, chopped prawns and chives. If you don’t have an air fryer, you can shallow fry them in oil (180°C) for a few mins until golden.
For the filling 200g premium fish paste 10g chives 4 peeled prawns
For the glue 1 tbsp cornstarch 1 tbsp water
For the mayo dipping sauce 1 tbsp mayonnaise 1 tbsp evaporated creamer 1 tsp honey
1. In a bowl, mix the ingredients for the filling. Then, slap the ingredients into the bowl for about 5 mins, until the filling is sticky and bouncy.
2. Make the glue by mixing the ingredients together. Set aside.
3. Place one beancurd sheet on a flat surface. Using a damp cloth, wipe the beancurd sheet on both sides (wipe at least 2-3 times to remove excess salt. Wiping it will also make it more pliable). Place about one tablespoonful of filling onto the sheet, about 1 cm from the sides and 2cm from bottom. Fold the bottom upwards. Using your fingers, apply glue around the edges and then fold to form a parcel. (watch video here to learn how to fold the rolls). Repeat for other sheets until filling is used up.
4. Spray air fryer with some cooking spray. Place beancurd rolls in a single layer in air fryer, then spray again with more cooking spray. Cook in air fryer at 180°C for 20 mins until beancurd is crispy.
5. Meanwhile, place all ingredients for dipping sauce in a bowl and mix well.
6. Serve the beancurd rolls hot with the mayo dipping sauce. We usually cut each roll into half with scissors.
Tip: Make sure to wipe the beancurd sheets a few times to remove excess salt from the sheets, otherwise it will be very salty.
Who loves fried chicken? I DO! Ever since we got an air fryer, I've been trying out lots of fried chicken recipes and this Air Fryer Chicken Karaage is one of my favourites!
Chicken karaage is Japanese-style fried chicken. It's best to use boneless chicken thigh or chicken chop for this recipe cos you get tender, moist chicken as well as crispy fried skin in one bite. The chicken are cut into bite-sized chunks and then marinated with Japanese soy sauce, cooking sake, grated garlic and ginger for at least one hour. Then it's dredged in seasoned potato flour and air fried for 15-20 minutes. It's that simple! During my last attempt, I added some baking powder to the flour dredge and it turned out ultra crispy. We love having chicken karaage with either cold soba or udon. A simple yet satisfying meal, not to mention a healthy way of frying chicken since very little oil is used in the process.
Air Fried Chicken Karaage
Recipe by Baby Sumo
Preparation time: 10 minutes
Cooking time: 35 minutes
Serves 3-4 (about 25-30 pieces)
Ingredients 450g boneless chicken thigh, cut into 1” pieces 3/4 cup potato flour 1/4 tsp baking powder Salt Cooking spray
For marination 1T Japanese soy sauce 1T cooking sake 1/2 tsp grated ginger 2 cloves garlic, grated
1. Marinate chicken for at least 1 hour.
2. Season potato flour and baking powder with some salt. Mix well. Dredge chicken pieces in flour.
3. Line fryer with foil. Arrange chicken in air fryer in a single layer. Cook the chicken in two batches.
4. Spritz generously with cooking spray. Cook each batch for 15 mins at 200C. You may want to flip the chicken at half time to ensure even cooking.
5. Once both batches are done, return to air fryer and cook for a further 5 mins.
6. Serve with shredded cabbage and mayo.

Miss dining at the mamak? When I first made this crispy air fried chicken drumsticks, my son remarked that it tasted similar to the ones we used to have at the mamak. To complete your mamak experience at home, serve the fried chicken with stir fried turmeric cabbage and fried egg. And maybe a cuppa of teh tarik too. YUM!
For the mamak fried chicken, I used Bestari crispy fried chicken coating mix, simply cos I have this at home. You can try this with any other fried chicken mix. Add 1 tablespoonful of curry powder to the wet batter mix for that extra oomph and elevate it from ordinary fried chicken to the desired mamak-style fried chicken. Don't forget to coat the marinated drumsticks with a layer of fried chicken mix again before adding it to the air fryer to cook. Crispy, crunchy, delicious.... good enough to rival your local mamak!

1. In a mixing bowl, add the ingredients for the wet batter and mix well. Coat the drumsticks with the batter and then cover with cling film and place in fridge to marinate for at least 30 minutes.
2. Coat each drumstick with fried chicken coating mix and spritz generously with oil, about 3-4 times each side (*see tip below).
3. Cook in air fryer at 200C for 30 minutes. Serve.
Note: If deep frying, heat oil to 180C, then fry chicken pieces until golden brown or until internal temperature is 165F (74C).
We recently won an air fryer in a cooking contest, so we've been trying a slew of different recipes in the kitchen. I never felt the urge to buy one before this, as I assumed that it would be no different from oven cooking, which we already do in our kitchen.
Boy, was I wrong! So after trying the air fryer for over a week now, we do notice that the food is much crispier than it would be from an oven, and the cooking time is slightly shorter too. The disadvantage though, is that it can't really handle a huge amount of cooking at a time due to the size of the frying basket. But what a nifty tool to have in the kitchen, I would say - best of all, we can greatly reduce the amount of oil we would normally use to deep fry food and still get the same satisfaction from eating it.
Air fried chicken wings
So, the first thing we cooked in the air fryer was air fried chicken wings. Since chicken wing is made up of lots of skin, we just coated them in oil, some yuzu salt (you can just use regular salt) and garlic powder, popped it in the air fryer for 20 minutes and voila! Crispy, yet juicy wings. No standing over hot stoves or oil splatter. Love it!
Air fried chicken wings Recipe by Baby Sumo
Preparation time: 3 minutes
Cooking time: 20 minutes
Serves 4
Ingredients 800-900g chicken wings
2 tbsp olive oil
1 tsp yuzu salt
1 tsp garlic powder
1. Separate your wings into drumettes and wingettes. You can also leave them whole if you like. Pat dry with a kitchen towel.
2. In a bowl, mix the olive oil, yuzu salt and garlic powder. Toss the wings in the oil.
3. Cook in air fryer at 200C for 20-25 minutes, until golden brown. Toss the wings around halfway through so it cooks / browns evenly.
