How to Make Lemang (Without Bamboo)(Recipe Video)

Lemang, together with rendang, are two of my favourite things to eat during Raya! So, for the past two years, we have been making these two dishes during the Raya celebrations. Recipe: Chicken Rendang (Rendang Ayam)
During the Raya festivities, two of my favourite things to eat are lemang and rendang. One of the easiest and quickest rendang you can make at home is chicken rendang, also known as rendang ayam. Beef rendang takes at least 2 hours to make, whereas chicken rendang can be ready in as quick as 45 minutes.
For my version, I use only chicken breast as this is our family's preferred cut. Otherwise, use half a chicken for this recipe. The aromatics are first blended and sauteed, and then coconut milk and the rendang mix are added. I used Baba's rendang mix, since it's convenient (plus end result tastes great!). Then, the chicken is simmered, before kerisik and kaffir lime leaves are added, before a final simmer for 30 minutes until the rendang is dry. Rendang keeps well for a few days in the fridge or up to a month in the freezer, so you can make a big batch and freeze. Do also try my lemang recipe - trust me, it's the perfect pairing with the chicken rendang!

Chicken rendang (Rendang Ayam)
Recipe by Baby Sumo, adapted from Baba's
Preparation time: 15 minutes
Cooking time:
Serves 4
Ingredients
7 shallots, peeled
7 garlic, peeled
4cm ginger, peeled
1 lemongrass, bruised
2 tbsp cooking oil
250ml coconut milk
1 pack (25g) Baba's Rendang Mix
500g chicken breast, cut into 3-cm chunks
250ml water
1 1/2 tsp salt
1 tbsp kerisik (see notes)
2 kaffir lime leaves
To garnish
1 kaffir lime leaf, thinly sliced
1. Blend shallots, garlic and ginger. In a wok, heat the oil over medium high heat and saute the blended ingredients and lemongrass for 2 mins until aromatic.
2. Add the coconut milk and Baba's rendang mix and mix well. Then, add the chicken, water and salt, and simmer, covered, for 10 minutes.
3.Stir in the kerisik and kaffir lime leaves and cook, while stirring, until gravy is thick, about 20-25 minutes. Serve, garnished with very thinly sliced kaffir lime leaves. Rendang is best eaten with lemang.
Note: I made the kerisik using dessicated coconut. Lightly toast until golden, then place in spice grinder or blender, and blend for 2 minutes, until it resembles brown sugar.

Recipe: How to Make Lemang at Home
Lemang is one of our favourite things to eat during Ramadan and Raya. It is a traditional food made from glutinous rice, coconut milk and salt, cooked in a bamboo lined with banana leaves. Usually, you can see lots of stalls selling this by the roadside in the run up to Ramadan and you can also find it in hotel Ramadan buffets.
So, here's an easy, cheat's version of lemang that you can try at home, minus the bamboo. For my version, you first soak the rice for 3-4 hours, and then steam it for 25-30 minutes. The rice is then mixed with coconut milk, to make it all rich and sticky. Allow the rice to cool, and then wrap in banana leaves and place under the hot grill to achieve the slightly toasted, smoky flavour that you normally get from cooking it in a bamboo over a small fire and to impart the banana leaf fragrance to the rice. Lemang is best enjoyed slightly warm, with serunding or rendang.
We definitely enjoyed our homemade version... rich, sticky, aromatic and soft rice.... even with no bamboo, I think this is a pretty darn good version you can easily recreate at home for your family. :)
Lemang (Glutinous Rice Wrapped in Banana Leaf)
Recipe by Baby Sumo
Preparation time: 10 minutes
Cooking time: 40 minutes
Serves 4
Ingredients
250g glutinous rice
2 pandan leaves, knotted
200ml coconut milk
1/2 tsp salt
2-3 large sheets banana leaves, approx. 10"x 8"
1. Soak the rice in cold water for at least 3-4 hours, or overnight. Drain and transfer to a heatproof plate and steam for 25-30 minutes, until the rice is tender. You may steam the rice with the pandan leaves, which will add extra fragrance to the rice. The cooking time will vary depending on the soaking time. (Note: To cut down steaming time, you can also add 1/4 cup water to the rice before steaming. It will help the rice become soft faster).
2. In a separate pot, gently heat the coconut milk and salt and stir to mix. Set aside to cool slightly.
3. Tip the steamed rice into a large tray and spread it out to help it cool quickly. Pour the coconut milk over the rice and gently mix it. Set aside to cool.
4. Place banana leaves in a heatproof plate in the sink and pour over boiling hot water to scald. This is to soften the leaves so that you can easily fold them later. Leave for 1 minute, then remove and wipe dry with kitchen towel.
5. Place a large mound of rice on the leaf, in the shape of a cylinder 2cm from the edges and then roll to form a "sausage" with a diameter of 1.5 to 2 inches. Press gently so that the rice is nice and compact. Repeat for remaining rice.
6. Preheat grill to 230°C. Put the rolled rice on a baking tray and place under hot grill for 10 minutes, until slightly burnt around the edges. Remove and allow to cool for 10 minutes.
7. Slice about 1.5cm thick and serve with your favourite rendang or serunding.

Lemang Stall @ Cheras, Selangor
Coincidentally, there was cartoon on TV1 about lemang, and we watched it with the kids. We learnt that the glutinous rice needs to be soaked for 4-5 hours first, and then filled into the bamboo tube, along with coconut milk and salt. The bamboo has to be lined with banana leaves to prevent the rice from sticking to the bamboo. The bamboo tube containing glutinous rice, salt and coconut milk is then placed slightly slanted on a small fire with the opening facing upwards and should be turned regularly in order to make it evenly cooked. It then takes about 2-3 hours to cook the lemang. Once it is cooked, the hollowed bamboo will be cut to retrieve the lemang inside.
Every Raya, we would also purchase some lemang home to enjoy. The stall we frequent is located on Jalan Suadamai (see below for GPS coordinates). This is also one of the most popular lemang stalls in the area, you can see rows and rows of lemang being cooked over the fire daily.
Lemang is best eaten warm, hence do not buy it too early in advance unless you are planning on reheating it before eating. They sell the lemang here according to size (width of the bamboo) - small is RM14, medium RM16 and large RM18. We got the medium sized one, as well as some beef rendang (RM20 per tub). The lemang here is really good, soft, sticky and fragrant. Love it! And the beef rendang is cooked just right, tender, flavorful and mildly spicy.
