Recipe: Nikujaga (Japanese Beef & Potato Stew)

Nikujaga is the Japanese version of a beef ("gyuniku") and potato ("jagaimo") stew. The beef, which is sliced thinly, is braised with potatoes and onions in a dashi stock seasoned with Japanese soy sauce, mirin, cooking sake and sugar. Carrots are not in the original recipe, however I added it in for a pop of colour and furthermore, a little extra vegetables won't hurt, right? A great one-pot meal, nikujaga is perfect for those who prefer a lighter yet robust stew :)




Nikujaga (Japanese beef & potato stew)
Recipe by Baby Sumo, adapted from Japanese Bible
Preparation time: 15 minutes
Cooking time: 50-60 minutes
Serves 4


Ingredients
400g beef knuckle (or any braising beef), sliced thinly
1 tbsp cooking oil
1 tbsp sesame oil
500g potatoes, peeled and cut into 3cm cubes
1 large yellow onion, peeled and cut into 6 wedges
1/2 carrot, cut into quarters
500ml dashi stock
1 tbsp caster sugar
3 tbsp Japanese soy sauce
2 tbsp mirin
1 tbsp cooking sake
1 spring onion, green part only, cut into 1.5" lengths

1. In a heavy based saucepan, heat the cooking oil and sesame oil over medium high heat. Add the potatoes and saute for 8-10 minutes, until lightly golden all over. Remove and set aside.

2. Add the onions to the pan, and cook for 3-4 minutes until softened. Remove onions and set aside.

3. Add the beef to the pan and saute for about 2-3 minutes, until browned all over. Remove and set aside.

4. Return the potatoes and onion to the pan, and add dashi, sugar, 2 tbsp soy, mirin, and sake and bring to the boil. Once boiling, reduce to low heat, cover and simmer for 15 minutes. Skim any rising scum for the surface (if you prefer a clear finish to your stew) however you may just skip this step if you find it unnecessary.

5. After 15 minutes, add the beef from Step 3 and carrot, and continue to simmer for another 15 minutes, or until potatoes are tender.  Adjust seasoning as required with extra soy sauce or sugar.

6. Add spring onions to serving bowl and spoon hot stew into bowl. Serve with rice.


Note:
1. For the dashi stock, I mixed 500ml boiling water with 1 pack (5g) of instant dashi sachet.
2. For the seasoning, I recommend that you start with 2 tbsp Japanese soy sauce and gradually increase to your liking.

Recipe: Macanese Minchi 免治 (Mince & Potatoes)

What is minchi 免治? Minchi (also known as minchee) is a Macanese dish, which contains minced meat cooked with onion and garlic, seasoned with dark and light soy sauce and topped with fried potato cubes.

Traditionally it is made with both minced beef and pork; I've tried making it with just pork, as well as just beef and also a mix. They taste equally great, so just use whichever meat you prefer. The minchi is topped with crispy, fluffy fried potato cubes and served with rice and a fried egg. A great, easy weekday meal which the kids adore!

Recipe by Baby Sumo
Preparation time: 15 minutes
Cooking time: 20-30 minutes
Serves 4

Ingredients
400g beef mince
1 yellow onion, finely chopped
2 cloves garlic, finely chopped
6 tbsp cooking oil
3 potatoes (275g), peeled and cut into 1cm cubes
2 tbsp light soy sauce
1/2 tbsp cooking caramel or dark soy sauce
1/4 tsp caster sugar
1 bay leaf
Freshly ground black pepper

Spring onions, to garnish
Rice, for 4
Fried egg, for 4


1. In a large wok, heat oil over high heat. Once hot, add the potatoes and fry for 10-12 minutes until golden brown. Remove and set aside.



2. Remove oil, leaving only 2 tablespoons in the wok. Over medium high heat, cook the onions and garlic for 3-4 minutes, until the onions are softened.

3. Then, add the beef mince and bay leaf and cook, stirring frequently until the meat is browned and cooked through, about 5 minutes.

4. Season with light soy sauce, cooking caramel, sugar, and black pepper and continue cooking over medium heat for 2-3 minutes. Taste and adjust seasoning as necessary.

5. Place meat onto serving plate, then top with crispy fried potatoes. Garnish with spring onions. Serve with rice and fried egg.

Note:
1. You can also use a mixture of 200g beef mince and 200g pork mince.

Other than that, the set also comes with two slices of cake - I selected the carrot cake and red velvet - great choices I have to say, especially the carrot cake, which was lovely and moist. We set it all out in our two-tier stand as well as fine bone china plates .. loved how pretty the whole set looked, perfect for a celebration!


The set came nicely packed, so everything was still beautiful and intact when it arrived.

Golden Valley KL: Super Value Set Menu, Crabs & Roast Duck!

Golden Valley KL, one of KL's best Halal Chinese seafood restaurant has recently reopened their restaurant in Melawati Mall for dine-in and are also now offering delivery and takeaways.

As part of their reopening, they are offering the Super Value Set Menu, available for 2, 5 or 10 pax, priced from RM50 nett. We went for the Set for 2 (RM80 nett) which comes with your choice of soup, seafood, tofu / egg and vegetables.  We had the Szechuan hot and sour soup, Salted egg yolk squid, Thai-style deep fried tofu, and Mixed vegetable curry. Everything was so yummy :)

Mixed vegetable curry - this was super good! One of my favourite dishes of the evening.. never knew a vegetarian curry could be so flavorful and tasty. Even the kids loved it.

Other than the Super Value Set, Golden Valley is also offering a selection of noodles and rice, as well as their signature roast duck and crabs. For the HK-style roast duck, they are using Halal duck sourced from Perak - you can order quarter (RM28), half (RM48) or whole duck (RM88). For a limited time, you will also get complimentary rice and lettuce with oyster sauce with your roast duck. As expected, the skin is no longer crispy since it was delivered, however the meat was still juicy, tender and flavorful. It comes with a few different dips; I like it with the classic plum sauce.

So, one of my favourite dishes from Golden Valley is their famous chilli crabs, so imagine my delight when I heard that the crabs were available for delivery too! Priced at RM160 per kg, each crab weighs around 600g and comes with complimentary 6 pieces of mantao. It was absolutely fantastic and finger licking good; the boy loved the big meaty, sweet claws and the sauce was just as amazing as we remembered it. We loved it..best chilli crab in KL! Highly recommended!

Recipe: Hainanese Chicken Rice Balls

Hainanese chicken rice is a famous dish in Southeast Asia, whereby poached chicken is served with seasoned rice cooked in chicken stock, chilli sauce and cucumber.

A couple of weeks ago, I made the Melaka version at home, serving the rice in ball form rather than just in bowls. History has it that the rice were shaped into balls as they keep warm for longer; from the time it is made in the morning at home until the time it is consumed at work later on in the day. We personally like it this way cos it's much more fun to eat as you can just pop them straight into your mouth.

The kids had fun helping me roll and shape the rice into balls. The rice is usually seasoned with ginger, garlic, salt and chicken stock and cooked with pandan leaves. For convenience, I used the Taste-Me Hainanese Chicken Rice Paste, which contains all the prerequisite ingredients to make an authentic tasting Hainanese chicken rice. Simply add the paste to your rice and water in a rice cooker and stir well to combine and voila!



The chicken is also extremely easy to make - I used chicken breast, which is first poached in boiling water and sliced, then drizzled with a sauce made from chicken broth, soy sauce and sesame oil. The remaining broth can be seasoned with just a little salt and you have a delicious bowl of clear soup to go with the meal as well. Taste-Me Sos Cili Padi is the perfect accompaniment to your chicken; it's pretty fiery and definitely has a kick to it.

Beansprouts are usually served with the Ipoh's version of chicken rice, and since I had some homegrown beansprouts (which were fat and juicy), so why not just add it onto the meal. Simply blanch the beansprouts with hot water and then drizzle with some of the same sauce you used for your chicken. Everyone at home loved the Hainanese chicken rice meal;  super satisfying and delicious, and very healthy too!

Hainanese Chicken Rice

Preparation time: 30 minutes
Cooking time: 30 minutes
Serves 4

Ingredients
For the rice balls
1/2 pack (50g) Taste-Me Hainanese Chicken Rice Paste
250g rice
400ml water
2 pandan leaves, knotted

For the chicken
400g chicken breast
1l water
1/2 tsp salt

For the chicken rice soy sauce
4 tbsp chicken broth
1 tbsp Taste-Me soy sauce
1 tsp Sin Tai Hing Fook Tong sesame oil

For the beansprouts
2 cups beansprouts

To garnish
2 spring onions (green parts only), finely chopped
1/4 red chilli, deseeded and sliced
1/2 Japanese cucumber, peeled, halved and sliced

A. For the chicken:

1. In a large pot, bring water to the boil over high heat. Once boiling, add the chicken and cook, covered, over medium heat for 10 minutes. Turn off heat and leave chicken to steep in covered pot for a further 15 minutes.

2. Remove chicken from pot and allow to cool for 10 minutes, before slicing. Plate.

3. Mix the ingredients for chicken rice soy sauce in a small bowl. Drizzle 3 tablespoons of sauce over the chicken and then garnish with spring onions, red chilli and Japanese cucumber.

4. Reheat the chicken broth over medium heat. Season with salt. Spoon into bowls and garnish with spring onions.


B. For the chicken rice balls:

1. Wash rice until water is clear. Place rice in pot or rice cooker, then add water and Hainanese chicken rice paste. Use a clean spoon and mix well. Add pandan leaves and cook, like you would normal rice, until rice is tender.

2. Remove pandan leaf and fluff up the rice, using your rice scoop. Transfer to a large plate to help cool slightly, so you can shape the rice into balls.

3. Grab a small mound using your hands and pat to form balls, the size of golf balls. This recipe yields about 20 rice balls.

C. For the Ipoh-style beansprouts:

1. Blanch beansprouts in boiling water for a minute. Drain and place on plate.

2. Drizzle remaining chicken rice soy sauce over beansprouts.

Recipe: Chicken Kurma + Easy Cucumber Pickles (Acar Timun)

Chicken kurma (ayam masak kurma) is a lovely, mild and thick curry which can be enjoyed by the whole family. I used a ready made chicken kurma paste (we tried the brand, Lizar), which Hubby got from the supermarket. Super convenient, as all I needed to do was peel the potatoes and carrot and cut them up, and simmer along with chicken drumsticks, water and coconut milk.

You can serve chicken kurma with rice or flatbreads, as well as a pickle on the side. I am also sharing this easy 15-minute pickle recipe for acar timun (aka cucumber pickles, with carrots, shallots and red chilli).

Easy Chicken Kurma (Ayam masak kurma)
Recipe by Baby Sumo
Preparation time: 5 minutes
Cooking time:  50 minutes
Serves 6-8

Ingredients
1 pack (150g) Lizar chicken kurma paste
1 kg chicken drumsticks
4 potatoes, peeled and cut into chunks
1 carrot, peeled and cut into chunks
400ml water
150ml coconut milk

1. In a heavy based pot over medium high heat, place water and chicken kurma paste. Stir to blend the paste.

2. Add the chicken and simmer for 10 minutes over medium heat.

3. Add potatoes and cook for a further 30 minutes, then add carrots and coconut milk and simmer for a further 10 minutes. Season with salt, if necessary. Serve with rice or flatbread.

Acar timun (Cucumber pickle)
Ingredients
1 Japanese cucumber, peeled at intervals
1/2 carrot, peeled and cut into matchsticks
1/2 red chilli, thinly sliced
1 shallot, thinly sliced

For pickling
Juice of 1 lime
1 tsp salt
1 tbsp caster sugar
1 tsp white balsamic vinegar


1. Place all ingredients for pickling in a small bowl and mix well until sugar and salt is dissolved.

2. Slice the cucumber to 2 inch lengths, then quarter. Place in a bowl along with carrot, chilli and shallot and add the pickling solution.  Mix well and leave for at least 15 minutes.

Recipe: Tuna Pasta with Cherry Tomatoes

Pasta is a staple in our home, since the youngest loves and can have spaghetti like all the time. One of my current favourites is the simple tuna pasta with cherry tomatoes.

An extremely easy dish to put together, you simply toss the spaghetti in garlic oil and with canned tuna, and then top it with some balsamic cherry tomatoes and lots of freshly ground black pepper. If you do not have balsamic vinegar, you can just serve it with halved cherry tomatoes, but I do like the addition of balsamic as it brings out the lovely sweetness of the tomatoes. If you're extra lazy, you can also skip the garlic oil step and this would still taste wonderful.

Tuna Pasta with Cherry Tomatoes

Preparation time: 5 minutes
Cooking time: 10 minutes
Serves 2

Ingredients
200g spaghetti
1 can tuna in olive or sunflower oil
2 shallots, thinly sliced
8 cherry tomatoes, quartered
1/2 tsp balsamic vinegar
2 cloves garlic, finely chopped
2 tbsp extra virgin olive oil
Salt
Freshly ground black pepper

1. In a large pot of salted water, cook spaghetti according to pack instructions, for 10 minutes, or until al dente. Drain and set aside.

2. In a large frying pan or wok, heat olive oil. Add the garlic and saute for 2 minutes, until lightly golden. Turn off heat, then add the spaghetti, tuna and shallots and toss. Season with generous amounts of freshly ground black pepper and salt, then divide into two plates.

3. In a small bowl, combine the cherry tomatoes and balsamic vinegar. Top cherry tomatoes onto pasta and enjoy!

Note:
1. If skipping garlic oil step, simply drizzle the oil onto the pasta while tossing with tuna and shallots.

Sofitel Kuala Lumpur Damansara: Frozen Dim Sum Delivery

One of the things we miss having during this MCO period is dim sum. Last week, we finally had a lovely yum cha brunch in the comfort of our home, thanks to the frozen dim sum delivery we received from Sofitel Kuala Lumpur Damansara.

Yes, Sofitel Kuala Lumpur Damansara is now offering Frozen Dim Sum from their Chinese fine dining restaurant, Wan Chun Ting, as part of their enhanced Takeaway Menu. Furthermore, you can also enjoy complimentary delivery within 10km radius from the hotel.

There are 12 different types of pork-free frozen dim sum to choose from; from steamed to deep fried as well as buns.
  • Chicken wings with golden mushroom and red dates - 4 pcs (RM15)
  • Fish ball - 4 pcs (RM15)
  • Bean curd roll topped with dried scallop sauce - 4 pcs (RM15)
  • Traditional chicken siew mai - 4 pcs (RM17)
  • Spicy Szechuan style chicken feet (RM17)
  • Crispy dumplings - 4 pcs (RM17)
  • Deep fried bean curd roll with mozzarella cheese - 4 roll (RM18)
  • Glutinous rice with chicken and mushroom (RM18)
  • Shrimp dumpling (har gao) - 4 pcs (RM19)
  • Barbecued chicken buns - 6 pcs (RM30)
  • Yam custard buns - 6 pcs (RM30)
  • Salted egg yolk custard buns - 6 pcs (RM30)
The frozen dim sum came nicely packaged; mostly in aluminium trays which were really handy because that means you can just pop them straight into your steamer. Most of the items take about 10-15 minutes to cook from frozen.

Made with premium, high quality ingredients, the dim sum selection was top notch, and they tasted amazing! Our favourites were the Traditional chicken siew mai, Crispy dumplings, Bean curd roll with mozzarella cheese and Salted egg yolk custard buns.
