Recipe: Ayam Masak Merah

π€π²πšπ¦ 𝐌𝐚𝐬𝐚𝐀 𝐌𝐞𝐫𝐚𝐑, translated as red cooked chicken, is a Malay dish whereby chicken is cooked with chilli paste (cili giling) and tomato puree. I usually make it with chicken fillet or chicken breast cos they cook quicker (and that's the cut my family likes eating). You can serve it with Nasi tomato and acar jelatah.. super yum!

Recipe by Baby Sumo
Preparation time: 10 mins
Cooking time: 30 mins
Serves 4

Ingredients
400g chicken fillet or breast, cut into large chunks
1/2 tsp turmeric powder
1/4 tsp salt
2 tbsp cooking oil
2 tbsp cili giling
1 tsp chicken stock powder
1 tbsp sugar
1/2 cup Cirio finely chopped tomatoes / tomato puree
1/2 yellow onion
1 tomato, cut into 8
1/4 cup frozen peas
1 cinnamon stick
1 star anise
2 cardamom pods

To blend
3 cloves garlic
2 shallots
1/2 yellow onion
2 tbsp water

1. Marinate chicken with turmeric and salt for 10 minutes.

2. Place ingredients to blend in a blender or mini food chopper and blend until you get a fine paste. 

3. In a wok, heat oil. Add chicken and cook for 4-5 mins, until no longer pink and evenly browned on all sides. Remove and set aside.

4. Add cinnamon stick, star anise and cardamom pods and saute for 2 mins until fragrant. Add blended ingredients from (2) and saute for 4-5 mins. Add cili giling and saute for further 2-3 mins.

5. Add tomato puree / finely chopped tomatoes and season with sugar and chicken stock powder. Return cooked chicken back to wok and add onions, tomato and frozen peas. Cook for another 8-10 mins, until sauce has thickened. Serve with nasi tomato or nasi minyak, along with acar jelatah.

The Chow Kit Kitchen & Bar, KL

If you're looking for a restaurant serving delicious Malay cuisine in the heart of Kuala Lumpur, look no further than The Chow Kit Kitchen & Bar. Located in The Chow Kit boutique hotel, we were totally smitten with the beautiful interior of the restaurant as well as the fabulous food that we had during our visit here.

Here are some of the dishes that we tried:

Chicken satay (RM25): tender, well-marinated chunks of chicken served with a nice peanut sauce.




Kerabu Mangga (RM35): really appetising Malay salad, consisting of young mango with cashew and a whole grilled squid. Love the smoky flavour imparted from the grill on the squid.




Cucur Udang (RM25): I do love a good cucur udang and this one was deliciously crisp. Large tiger prawns are used in the cucur udang here.



Kambing Kuzi with basmati rice : part of the set lunch. Tender and flavourful mutton curry with cashews and raisin, my son loved this.





Other than Malay cuisine, you will also find several Western dishes (with an Asian twist) such as:

Signature fish and chips (RM63): unlike any fish & chips we’ve had, they serve a whole deboned tandoori marinated grouper with hand cut fries. The fish was very moist and flavorful from all the different spices used. A WOW dish!




Signature chicken chop (RM43): pan seared chicken chop with a sweetish onion and pepper sauce. Tender πŸ‘ŒπŸ»


For dessert, we had the:

Sago gula Melaka (RM20): sago with a surprise ingredient (water chestnut rubies) served with coconut ice cream and gula Melaka syrup. Yum!

Recipe: Roti John

Roti John is an omelette-minced beef sandwich that we can often find at Ramadan Bazaars. Since we didn't get to visit any bazaars this year, I decided to try making this at home. The minced beef is first cooked with the spices, onion and garlic. Then, the cooked beef is added to beaten eggs. This mixture is ladled onto a frying pan and toasted buns are laid on top until the egg has set. Finally, garnish with lettuce, mayo and ketchup and enjoy! Absolutely delicious ;)

Roti John
Recipe by Baby Sumo
Preparation time: 10 minutes
Cooking time: 30 minutes
Makes 12

Ingredients
2 tbsp cooking oil
220g minced beef
1 tbsp curry powder
1 tbsp cumin powder
1/2 yellow onion, diced
2 cloves garlic, minced
1 tsp salt
Freshly ground black pepper
2 stalk spring onion, finely chopped
5 eggs
6 Cheddar cheese slice
Lettuce, finely shredded
Ketchup
Mayo
6 Hotdog buns

1. In a saucepan, heat oil over medium high heat. Then, add the onion and garlic and saute for 3-4 minutes, until softened. Then, add beef, curry powder and cumin powder and cook for about 10-15 minutes, stirring frequently.  Season with 1/2 tsp salt.

2. In a large bowl, break eggs and add black pepper, 1/2 tsp salt and spring onions. Lightly beat with a fork.

3. Add cooked beef to the egg and mix well. 

4. Spread buns with butter or margarine and toast in oven under grill for 1-2 minutes. You can also use your toaster, then spread with margarine after.

5. Ladle a spoonful of beef-egg mixture onto frying pan, in an oblong shape, then lay your buns on top. Cook until the egg has set, about 1 1/2 - 2 minutes.

6. Remove from heat, place buns on a plate. Garnish with lettuce, cheese slice, some Mayo and ketchup. Fold and cut the bun into half. Enjoy!

Ramadan 2021: Buka Puasa Set Menus, Delivered to Your Doorstep!

The holy month of Ramadan is finally upon us. For those who are still anxious about dining out and would still prefer to dine in the comfort of their homes, there are many restaurants and hotels in Kuala Lumpur which are offering deliveries of their Buka Puasa set menus straight to your doorstep!

In the mood for a feast? Here are some of our favourites:

1. Hotel Maya Kuala Lumpur


The Simfoni Santapan Maya Set Menu consist of three different sets namely Dedaun, Laman Bayu and Aman Sari. The sets are priced at RM60nett per person with 12 dishes (Dedaun), RM80nett per person with 13 dishes (Laman Bayu) and RM100nett per person with 14 dishes (Aman Sari). All sets come with appetisers, mains, dessert and a choice of 4 specially crafted infused bottled beverage. 

Highlights: Ayam Keremek Bergajus, Daging Salai Masak Lemak Pisang Muda, Ikan Patin Masak Tempoyak.

Available from: 5th of April to 12th of May from 11am to 9pm (last order at 8pm).

2. Golden Valley 

Fancy something other than Malay food for your buka puasa? Golden Valley offers authentic Chinese cuisine and seafood (made with Halal ingredients). There are three sets to choose from; Set for 2 (RM99), Set for 5 (RM299) and Set for 10 (RM699).

Highlights: Roast duck, Thai-style whole seabass, Szechuan hot & sour soup, Superior soup lala.

Mandarin Oriental, Kuala Lumpur is offering two different sets for Buka Puasa - the Bunga Raya Set Menu (RM432 for 4 pax) or the Bunga Melur Set Menu (RM592 for 4 pax). 

Highlights: Nasi biryani, Kajang satay, Ketam masak lemak daun selasih, Ayam goreng 65.

Ramadan 2021: Hotel Maya Kuala Lumpur's Delivery / Takeaway Set Menu

This Ramadan and Hari Raya, Hotel Maya Kuala Lumpur will be showcasing traditional kampung delicacies as a tribute to the signature dishes from the different states and celebrating the multi-diversity of different cultures in Malaysia.

Heading the specialised Raya menu is Chef Taib and Chef Hasbullah. In this new normal, it is understandable that many would prefer to break fast and dine in the comfort of their own homes. Hence, Hotel Maya Kuala Lumpur is offering takeaway and delivery besides their popular dine-in buffet.

During the holy month of Ramadan, guests can break their fast with the Simfoni Santapan Maya Set Menu which consist of three different sets namely Dedaun, Laman Bayu and Aman Sari. The sets are priced at RM60nett per person with 12 dishes (Dedaun), RM80nett per person with 13 dishes (Laman Bayu) and RM100nett per person with 14 dishes (Aman Sari). All sets come with appetisers, mains and dessert. There is a minimum order of 4 persons for each set ordered and there is an early bird discount of 20% for purchases made by the 12th of April. We had the Dedaun Set which came with the following dishes: Bubur Lambuk Ulik Mayang, Sup Soto Ayam Simpang Renggam, Kerabu Betik Muda, Ulam-ulaman with sambal belacan, Ayam Keremek Bergajus, Daging Salai Masak Lemak Pisang Muda, Ikan Patin Masak Tempoyak, Sayur Campur Cendawan Tiram Goreng Belacan Timur Jaya, Acar Rampai, Nasi Putih Haruman Pandan, Aneka Kuih Muih, Pengat Pisang Bersama Sago and Kurma. Dishes arrived packed in a beautiful presentation box and were individually labelled. Food was still piping hot when it arrived and tasted delicious; my personal favourites were the soto, chicken and daging salai. Portions were extremely generous too, and our family thoroughly enjoyed our early buka puasa feast at home.

For Hari Raya, guests can choose from three different Simfoni Hari Raya Aidlitifitri set menus: Hijauan Desa, Jendela di Taman and Di Tepi Pantai. The sets are priced at RM60nett per person with 12 dishes (Hijauan Desa), RM80nett per person with 13 dishes (Jendela di Taman) and RM100nett with 14 dishes (Ditepi Pantai). All sets come with appetisers, mains and dessert. There is a minimum order of 4 persons for each set ordered and early birds get 20 % off if they purchase by the 12th of May. The Simfoni Hari Raya Aidlitifitri set menu is available from the 13th May to 11th of June from 11am to 9pm (last order at 8pm).

All set menus requires one-day advance order and free delivery is provided up to 10km. Besides that, each set menu comes with a choice of 4 specially crafted infused bottled beverage. Guests can choose from either Maya Asam Boi Cooler, Mahsuri Berry, Rimba Kiwi, Awan Biru and Sinaran Mentari. They are the perfect thirst quenchers and are deliciously refreshing with real fruits used as garnish.

A-la carte menu is available for delivery and take away during the festive celebration from 5th of April until the 11th of June. Must-haves include the Lemang with Chicken Rendang; Satay; Kambing Bakar; Rendang Tok; Kari Kepala Ikan Salmon; Penggat Pisang Bersama Sago among others. The ala carte menu is priced from RM10 onwards.


For those who prefer attending Ramadan buffets in person at the hotel, their signature Citarasa Simfoni Malaysia Buffet dinner will start from the 19th of April until the 9th of May from 6.30 to 10.30pm at Maya Brasserie. At RM90nett per person, guests can enjoy unlimited kampung favourites with 13 specialised stalls and more than 100 dishes. Signature dishes include Roast Lamb, Gear-Box Soup with delicious bone marrows; Fish Head Curry; Satay and Yong Tau Foo. Diners will be spoilt for choice when they visit the restaurant’s Warungs showcasing specialties from different locations in Kuala Lumpur. 

To start, diners can revel in traditional Malay Ulams, Kerabu, pickles and condiments. The Warung Aneka Sup which features heart-warming local soups such as Gear-box Soup and Bubur Lambuk. If you fancy grilled items, the Warung Bakar Bakar Lorong Binjai makes fresh grilled squid, chicken wings and a selection of fish with special condiments to complement each item. Malaysian tea time favourite is at Warung Lorong Cendana and Warung Goreng-Goreng Kampung Baru. Reminisce childhood snacks such as Pisang Goreng, Cekodok, Rojak and so much more. Continue the experience down memory lane with local sweets. Savour Ais Kacang, Cendol, Len Chi Kang, Ais Krim Potong, Sago Gula Melaka, Fruit Rojak and variety of local fruits. Senior citizens and children are entitled to 50% off and early purchase get 20% off if they purchase by 12th of April.

Recipe: Sambal Udang (Prawn Sambal)

Our family loves eating nasi lemak, and since MCO started last year, I've made it countless times at home - either served with beef rendang, chicken rendang, ayam masak merah, sambal sotong or sambal prawns. Always satisfying, I guess you can call it our "happy meal".

One of my personal favourites is this sambal prawn, using these small and sweet prawns from Sungai Besar. The sambal is sweet and spicy, and is absolutely delicious spooned onto the rich coconut rice.

Nasi lemak with sambal prawn and acar jelatah

Sambal prawns (sambal udang)
Recipe by Baby Sumo
Preparation time: 5 minutes
Cooking time: 20 minutes
Serves 4

Ingredients
300g peeled prawns
2 tbsp cooking oil
1 large yellow onion, halved and finely chopped
2 tbsp cili giling
300ml water
1/2 tsp caster sugar
1/2 tsp salt
1 tbsp tamarind pulp
1/2 tsp chicken stock granules 
4 kaffir lime leaves, snipped

1. Soak tamarind pulp in 100ml of water. Remove seeds and set aside.

2. In a wok or pan, heat the oil over medium high heat. Add onions and cook for 4-5 minutes, until slightly softened. 

3. Add cili giling and saute for a few minutes, until fragrant. Then, add 200ml water, tamarind juice (from Step 1) and kaffir lime leaves. 

4. Season with sugar, salt and chicken stock granules. Simmer on medium heat for 10 minutes.Add more water, a little at a time, if sambal looks dry.

5. Add in prawns and cook for about 1-2 minutes, depending on size of prawns. Serve with coconut rice, crispy ikan bilis, toasted peanuts, fried egg/boiled egg and acar jelatah/ sliced cucumber.

Over the weekend, we visited the transformed Shook! for an evening out with the family. The restaurant is ultra spacious, and we're totally loving the snazzy interior.We were also serenaded by a pianist as we enjoyed our meal here.

Here are some of the dishes which we sampled here:

My personal favourite was the Miso Lobster Linguine; pasta topped with miso-marinated fresh rock lobster, spring onion, garlic oil, ikura and chilli flakes. So yum!



Rich and smooth seafood chowder, with added texture from the crispy nori crackers and charred sweet corn. And decadent it sure was!


A trio of satay skewers - chicken, lamb and beef, marinated with spices and grilled on an open coal fire and served with a chunky peanut sauce.



You can never go wrong with fried chicken - coated in a blend of flour and spices, and fried in a custom-made tri-ply pot to draw out the flavour and tenderness.



The thin-based pizza was excellent too, featuring Chef Willie’s house-made beef pepperoni, shredded oregano and mozzarella on a base of rich agnolotti sauce.

The Humble Assistant mocktail, featuring yuzu, peach and jasmine. Highly refreshing!
