I cooked: Astronomical Canapes (Avocado, Tomato, Mushroom)

Have you planned your New Year's Eve menu yet? If you're planning to throw a party, these canapés will make a great addition.

If you think the name of the canapés sounds a little bizarre, let me explain. This canapé was concocted during the Blogger MasterChef finals in mid October, whereby the mystery box ingredient turned out to be avocado. Most contestants were quite surprised with the mystery ingredient but since the finals was held in a shopping mall, it was not possible to give us meat or poultry or seafood to cook since there was no washing facilities at all during the cooking stage.

Anyway, back to the avocado. I wanted to make a creamy mushroom soup topped with an avocado quenelle, but they had no soup bowls!!! So I had to improvise with the ingredients I have taken, and decided to make a simple canapé.  What I like most about it is it's vibrant colour, so I think this will look quite pretty on the dinner table. It is also light tasting with a nice tang from the lime.

Since the Blogger MasterChef contest was run by Astro and Nuffnang, I decided to call it Astro-nomical Canapés when I was asked to present my dish to the judges. Do you like the name? :)

Astronomical Canapés

Canapé of Avocado, Tomato and Sauteed mushrooms
Preparation time: 25-30 minutes
Cooking time: 5 minutes

Ingredients
100g white button mushrooms and Swiss mushrooms, diced
Fresh parsley, finely chopped
1/2 onion, finely chopped
1-2 tbsp olive oil
2 ripe avocado
2 limes
1 tomato, diced
4-5 tbsp UHT cream
Salt and pepper
1 pack canape water cracker

1. To remove flesh from avocado, cut half, remove seed and then scoop out flesh using spoon. Avocado browns quickly when exposed to air, so add the juice of 1 lime to it. Put the avocado and cream in a blender and blend to a puree, season with salt and leave aside.

Other ingredients I took (thinking I was making a soup)

2. Heat olive oil in a frying pan over medium high heat. Cook the onions for 2 minutes, then add the mushrooms and cook for another 2 minutes. Add half the parsley, season with salt and pepper and remove from heat.

3. For the tomatoes,  place the diced tomatoes in a bowl and add the juice of one lime and the remaining parsley. Season with salt and pepper.

4. To assemble, first put a generous amount of avocado cream, followed by the tomatoes and finally mushroom on top.

Not much cooking involved, but it sure makes a pretty dish.

Something you can prepare in a jiffy for a party you are throwing.

*Did not have a scale during the competition, so all ingredients are estimated.

Recipe for my prawn dish (as seen on Blogger MasterChef)

During the Invention Test, our main mystery ingredient was prawns. Since they were pretty large and fresh prawns, I decided to keep it simple, so the judges can enjoy the natural sweetness of the prawns.

Since we were given many colorful vegetables and fruits, I decided to use this to my advantage to create a visually attractive dish. Here's my recipe for King Prawns with Garlic Butter, Coriander, and Curry Leaves served on a bed of sauteed vegetables and pineapple.

Ingredients
8 large prawns
A bunch of coriander, finely chopped
Extra virgin olive oil
Salt and pepper
25g butter
Curry leaves
1 shallot, thinly sliced
2-3 cloves garlic, diced
1/4 red pepper, cut into small cubes
1/4 carrot, cut into small cubes
1/4 zucchini, cut into small cubes
Pineapple, cut into small chunks
1 spring onion, cut into 3cm length
1/3 red chilli, deseeded and sliced

1. Firstly, peel the prawn shell and head, leaving only the tail. Then, devein the prawns, this will also give the prawns a nice curly shape once cooked.

Deveined prawns

2. Place the deveined prawns in a small bowl and marinate with 2 tbsp EVOO, coriander, salt and pepper for about 15-20 minutes.

3. Heat 1 tbsp of olive oil in a frying pan on medium high heat. Add red pepper, carrot, and zucchini and cook for 3 minutes. Add the pineapple cubes. Stir and season with salt and pepper. Remove from pan.

4. Heat 1 tbsp olive oil and butter in frying pan on medium heat. Add garlic, shallots and curry leaves and cook for 3 minutes or until garlic is golden brown. This will also impart the curry leaves flavour and aroma into the garlic butter.

5. Add the prawns and cook for about 1 1/2 minutes or until the prawns are pink. The prawns will cook very quickly, so do keep an eye on them as you do not want to overcook them. Overcooked prawns are rubbery in texture. Remove from heat.

6. Place the spring onions and red chilli in the hot pan and give it a quick stir, about 1 minute is sufficient to slightly cook them.

7. To serve, place sauteed vegetables, followed by the spring onions and red chilli on a plate. Then, arrange the prawns on top of the sauteed vegetables. Garnish the plate with a few curry leaves.

A simple and delicious prawn dish.. hope you enjoy it!

The Skills Test @ Malaysia's Blogger MasterChef Semi-Finals

For the first semi-finals, the contestants were asked to cook poached eggs as part of the Skills Test. I never expected them to test us on the same thing during the second semi-finals too. I've only made poached eggs a few times, but I did practice making poached egg last week with a little help from Delia Smith's cookbook.

But for those who's never cooked a poached egg before, Chef Ryan Khang demonstrated how this was done before the Skills Test began. He made it look so easy and effortless (I guess it's easy when you know how it's done..) but the way he showed us was a little different from the way I have been practicing all week. So, basically it's my first time making a poached egg using this method too!

Everyone listening attentively.. vinegar is required for this task

Also a whisk for creating a vortex

Steady hands so the poached egg doesn't break while you flip the egg white over the yolk

Nice one!

So after the demo, it was our turn to cook. We were given 4 eggs each, higher points will be awarded to those who are able to prepare 4 poached eggs. I haven't even started and I was facing some problems with my induction hob. The larger ring refused to work, so I ended up having to use the smaller ring and the water took ages to boil. So I managed to only get 1 poached egg done in the allocated time.

So this is the poached egg I made...

And it's judging time again

Basically for this round, the judge will just take a look at the egg and if it looks like a poached egg, then you're fine. I just garnished my poached egg with some mint leaves and specks of pepper.

Next, the results for both tests are added and the winners are announced.
