Ramadan Buffet 2019 @ Serena Brasserie, InterContinental KL

Culturally rich in heritage, Malaysia’s united identity shines through its cuisine as traditional flavours from different backgrounds blend together to create dishes we love. In light of this, InterContinental Kuala Lumpur invite diners to celebrate the different palates with a truly Malaysian feast at Serena Brasserie. Themed, “Warisan Tradisi di Serena” (Traditional Dishes in Serena), the culinary team have combined their treasured family recipes and expertise to present a spread of childhood favourites that takes diners on a journey down memory lane during this holy month of Ramadan.

One of the must-have dishes at any Ramadan feast is the roasted lamb. Kibas Bakar Pak Cik Yusof is a whole dorper lamb that is marinated overnight with aromatic spices and slow roasted over charcoal. Chef Yusof’s special marinade is continuously basted over the lamb to ensure every bite succulent with beautifully crisp skin.

We loved the Sup Kawah Gear Box Pak Cik Fakrul, a Malay version of lamb shank soup. Chef Fakrul learnt how to cook this rich and hearty soup from his mother. Boiled over low heat with cinnamon, star anise, and other Malay herbs, he includes a secret ingredient to elevate the flavour, as taught by his mother. The meat is then slow-cooked to ensure a tender, fall-off-the-bone texture. So flavorful.

Another crowd favourite is the Ikan Merah Tiga Rasa Pak Cik Mortaza, featuring three flavoured deep fried red snapper served with a sweet, sour and spicy sauce, paired with fresh ingredients including tomatoes, pineapples and capsicum.

If you love prawns, Uncle Wong’s Stir-Fried Tiger Prawn with Butter Sauce and Egg Floss will surely get you salivating. The egg yolks are carefully stirred into hot oil until they turn golden brown, all while ensuring they do not burn. This dish is perfect combination of fresh tiger prawns and the delicious butter sauce. Other fantastic prawn dishes available on the spread are Tandoori prawns and Jinga Korma prawn in cumin coriander gravy.

Try Chef Roy’s Roti Canai and Murtabak, with a unique twist - his variation features an unconventional shot of Sprite in the dough to provide an extra golden-brown crispiness. Murtabak is made using the same Roti Canai dough, with a stuffing of eggs, meat, onions and spices.

The buffet spread also boast Malay appetizers such as ulam-ulaman and kerabu as well as ocean-fresh seafood on ices such as slipper lobsters, oysters, scallops and mussels. There will also be a selection of sushi and sashimi.

On the buffet spread, you will also find many delicious Malay dishes such as Braised oxtail with asam pedas sauce (my fav!), Kupang masak lemak cili padi, Pajeri Nenas, Gulai Itik Serati and Rendang tok, which you can enjoy with the lemang.

The Indian corner features Chicken Tandoori, Lamb Biryani, Fish Head Curry, and Aloo Ghobi. Fans of Oriental cuisine can look forward to Wok-Fried Crab with Kam Heong Sauce, Kung Po Chicken and many more!

There will also be live action stations which include the grilled station, featuring seafood, lamb shoulder and beef steak, a deep-fried station, shawarma, roti John, rojak and prime rib.

For dessert, an impressive array of Malay kuih such as kuih talam, onde-onde and kuih seri muka, as well as cookies and dodol are available. There will also be assorted cakes, fresh local fruits, imported Kapiti ice cream and Aunty Sze Wei’s Homemade Tau Foo Fah served with ginger syrup.
