Recipe: Spicy roasted chicken drumsticks (Ree Drummond)

I am finding myself increasingly busy now that the kids are growing up, so when dinner time approaches, all I want is a quick and delicious meal. This recipe for spicy roasted chicken drumsticks from Pioneer Woman's (aka Ree Drummond) website ticks all the right boxes. 


I used a mix of chicken drumsticks and thigh for this, which is coated in a melted butter, lemon juice and a seasoning of your choice. I chose cayenne pepper, enough to give a little heat to the meat. Then, just pop the chicken in the oven and roast it for 30 minutes. Just before serving, I sprinkled some shichimi (Japanese seven spice) on top.

Sounds really simple (and super easy to prep too) but we loved it. The chicken had a crisp skin (pretty close to fried chicken but without any batter) and the meat was moist and succulent. Kids absolutely adored it. Another great recipe to add to our weeknight meal collection.

Delicious chicken with four simple ingredients

This was served with a simple side salad  and oven-baked fries. 





Spicy Roasted Chicken Drumsticks
Recipe by Baby Sumo, adapted from Pioneer Woman
Preparation time: 10 minutes
Cook Time: 30 Minutes
Serves 4


Ingredients
12 chicken drumsticks, cleaned and pat dry
80g butter
1/2 tbsp cayenne pepper
1/2 tsp salt
1/4 cup fresh lemon juice
1/2 tsp Shichimi Togarashi

1. Preheat oven to 200°C. In a small saucepan, melt the butter. Then pour in the lemon juice and add the cayenne pepper. Mix well. Season with salt.

2. Place one drumstick at a time into the butter mixture and coat it well before placing on a baking tray. Once all the drumsticks are coated, give them one last coat using a pastry brush. Pour the remainder of the butter into the tray. Season each drumstick with more salt.

3. Cook in preheated oven for 30 minutes. The chicken should be nice and brown, test with a skewer and the juices should run clear. Before serving, sprinkle some shichimi on top and drizzle some of the juice/sauce from the tray.
