Recipe: Bubble Tea (Make Your Own Boba Pearls!)

Craving for boba milk tea? Also known as bubble tea or pearl milk tea, this tea-based drink usually consists of tea, milk, sugar / creamer, and toppings such as boba pearls, grass jelly, fruit jelly etc. Our favourite topping is the chewy delicious boba, or pearl tapioca balls made from tapioca starch.

Since we cannot easily get bubble tea now due to MCO, we tried our hand at making our own boba pearls at home. All you need is tapioca starch, hot water and black food colouring. Best of all, you don't have to worry about it containing unapproved food additives.

You can add the boba pearls to your favourite tea... our choice is black tea, with lots of cold full cream milk, sweetened with condensed milk. Have fun!

Boba pearls (Tapioca balls)
Recipe by Baby Sumo
Preparation time: 15 minutes
Cooking time: 15 minutes
Serves 3-4


Ingredients
6 tbsp tapioca starch (tepung ubi kayu)
2-3 tbsp freshly boiled hot water
A few drops of black food colouring

1. Place tapioca starch into a mixing bowl. Make a well in the centre and add 2 tablespoon of hot water along with the black food colouring. Use a fork to mix the ingredients together until you get a soft dough. If the dough is too dry, add a little more hot water, about 1 tablespoon.

2. Pinch off some dough and roll into small balls, about 5-10mm in diameter. The dough will be grey in colour at this point.

3. Bring a pot of water to the boil. Add the balls and boil for 15 minutes. The balls will expand and swell up to the size of large blueberries or black grapes (don't worry - this is normal).

4. Remove with a slotted spoon into a bowl filled with room temperature drinking water. At this point, your boba pearls will turn black in colour.



5. Your boba pearls are ready for use! Make your favourite tea and add your boba pearls to it. 

6. For pearl milk tea, add 400ml hot boiling water to 2 black tea bags. Allow to steep for 5-10 minutes. Remove tea bags and add 1 1/2 to 2 tbsp of condensed milk and stir well. Add 200ml full cream milk (or more if you like your tea milky). Put in the fridge to cool and then add your boba pearls to it and enjoy!
