So, into the steamer the crabs went for a nice steam bath, about 15 minutes. While the crabs were steaming, we made a chilli lime dip to go with the crabs. We commonly make this dip to go with grilled seafood and they go very well together.
Sweet, flaky meat complemented by the spicy, tangy dip... delicious!
Steamed Dungeness Crab with Chili Lime Dip
Recipe by Baby Sumo
Preparation time: 10 minutes
Cooking time: 15 minutes
Serves 2
Ingredients
2 dungeness crab
For the chilli lime dip
4 cloves garlic, finely chopped*
2 shallots, finely chopped*
1 red chilli, sliced*
4 calamansi lime
1 tsp brown sugar
Salt. to taste
1. In a large pot over high heat, place a steamer rack and fill with water just below the rack and bring to the boil. Once boiling, add the crabs and steam for about 15 minutes.
2. Remove the crabs and allow to cool slightly before dissecting (you may google for step-by-step instructions).
3. For the dip: Place ingredients marked with * into a pestle and mortar and ground until you get a paste. Squeeze juices of lime into bowl, add brown sugar, salt and mix until sugar has dissolved. Taste, if the sauce is too spicy, you can add a little more sugar. Alternatively, place all ingredients in a blender and blend until you get a paste. Serve with crab.
