Recipe: Christmas Pavlova Wreath

Hello December! Tis' the season to be jolly ;) My favourite holiday season is here; our Christmas tree is up and looking mighty brilliant. 

So today I'd like to share the recipe for a festive dessert, Christmas Pavlova Wreath. We actually made this for our Christmas celebration last year and I loved how it added a festive cheer to our day. 

Pavlova is a meringue-based dessert topped with whipped cream and fresh fruits. For every egg white, use 50g of caster sugar. We made a 23-cm diameter pavlova wreath using two egg whites. Draw the outline for the wreath using a round object such as a baking tin or cake base. 


A beautiful, incredibly festive dessert, which is also very easy to make and put together. Top the pavlova with whipped cream and decorate with your choice of berries and mint leaves.  You can make the pavlova one day in advance so you get to spend more time with your family and friends on Christmas Day.

Christmas Pavlova Wreath
Recipe by Baby Sumo
Preparation time: 20-30 mins
Cooking time: 30-35 mins
Serves 6


Ingredients
2 egg whites
100g caster sugar
1/2 tsp vanilla extract


To decorate
300ml whipping cream
A large handful blueberries
A large handful strawberries
Mint leaves
Currants


1. Preheat oven to 150°C (no fan). Line a baking tray with baking paper, then draw a 23-cm diameter circle (or any size of your choice) using a round object.

2. Using an electric mixer, beat egg whites and vanilla extract in a large clean bowl until soft peaks. Add half the sugar and whisk until glossy, then add the remaining sugar and beat until the meringue is very stiff. Test using your thumb and forefinger, the mixture should be very smooth without any sugar grains.

3. Drop tablespoonfuls of mixture on the baking sheet, to form a wreath. Bake for 30-35 minutes until crisp. Turn off the oven.

4. Remove the tray from oven and gently lift the pavlova off the baking tray. This is to prevent sticking and ensure easier removal later once cooled.

5. Place the tray back in the oven and let pavlova cool completely inside the oven. 

6. Whisk the whipping cream until soft peaks. Place the pavlova on serving plate and top with whipping cream. Arrange the fresh fruits and mint leaves on top.
