I baked: Rock cakes

Rock cakes are delicious fruit cakes, named so due to its resemblance to a rock. However, it tastes far from a rock; instead it is crumbly and buttery and absolutely lovely served warm from the oven.

A favorite British tea time treat



Rock Cakes
Preparation time: 15-20 minutes
Cooking time: 15 minutes
Makes 16

Ingredients
200g butter, cut into small pieces plus extra for greasing
400g plain flour
4 tsp baking powder
150g soft brown sugar
200g sultanas
2 eggs, beaten
4 tbsp of milk


1. Preheat oven to 200°C.

2. Line 2 baking trays with baking paper.

3. Sift the flour and baking powder into a large bowl. Add the butter and rub it in with your fingertips until the mixture resembles breadcrumbs.



4. Stir in the sugar, and sultanas.



5. Add the beaten egg and milk to the mixture and mix to form a soft dough.


6. Spoon 16 mounds of the mixture on to the prepared making tray, spacing 1/2 inch to allow for expansion during cooking.

7. Bake in preheated oven for 15 minutes until golden brown and firm to the touch when pressed with a finger.



8. Remove the rock cakes from the baking tray and serve immediately, either on its own or with butter.

9. Any leftovers should be left to cool and stored in an airtight container.

  5. zoe: ooh, which bakery did you buy it from? I've never seen it sold before. yeah, they're best eaten warm from the oven.
    If you like cooking, an oven is a good investment.
