CNY 2013: Chynna, Hilton Kuala Lumpur

From 28th January to 24th February 2013, Chynna at Hilton Kuala Lumpur will be showcasing menus inspired by the Year of the Snake. Chef Lam Hock Hin once again impresses with his creative dishes, including one of the most unique yee sangs I've come across (ever). The CNY set menus are priced between RM178.80++ per person to RM398.80++ per person (for a table of 10 persons). 

We were invited to Chynna to sample some of their prosperous offerings, from the Scholarly Honour of Rank and Wealth menu (RM2488++ for 10 persons).

I remember going "wow" when I first saw the tea master perform his tea-pouring ceremony last year. Still very impressive watching it the second time around. Lovely, fragrant eight treasures tea.

Toss to a prosperous 2013 with the luxurious yee sang on offer, with ingredients such as Australian live lobster sashimi, Australian 3 heads abalone or sea birds nest. We had the latter, sea birds nest with golden MD2 pineapple yee sang. The sea birds nest is not birds nest as all, but it is actually a type of yellow seaweed from Sabah. It is mildly crunchy and is said to be rich in collagen.

We also sampled the unique Hakka Lei Cha with Rice Bran Oil Yee Sang. This is Chef Lam's unique take on the famous Hakka dish, which received nods of approval from everyone at the table. The basil pouring sauce was a gorgeous green hue and smelt so good. Absolutely delicious!

Hakka Lei Cha with Rice Bran Oil Yee Sang

Hubby heaped praises on the Shanghai style braised shredded abalone, sea cucumber and fish maw in supreme broth. This bowl of goodness was laden with so much ingredient - rich and bursting with flavour.


The marble goby fish (soon hock) may not be the prettiest fish to look at, but it sure was pretty tasty. The meaty fish was simply steamed with a taucu chilli sauce for a little heat.

The poached free range eunuch chicken (capon or "yim kai" in Chinese) was served with a Wincarnis sauce, a type of British tonic wine. Chef Lam explained that a capon can grow up to 4kg, and generous portion which was served to us was only half a chicken. The skin of the capon is rather springy and thick. The chicken went perfectly with the ginger-coriander sauce.

The steamed giant bamboo clam with spicy homemade dried shrimps sauce was one of my favorite dishes that afternoon. The giant bamboo clam which was sourced from Sabah was meaty and fresh, and was lightly steamed for 2 minutes. The sauce it was served with was similar to the "kam heong" style sauce.



The braised abalone with sea cucumber, sun dried oyster and fatt choy in dried scallop sauce was a dish full of auspicious meanings. One of my favorite CNY dishes.


The simmer bean vermicelli with minced meat Sichuan style was a nice change from the usual rice dishes in CNY menus. As a noodle lover, I would pick this over lap mei fan any day.



Lunch ended on a high note with the fragrant chilled Tianshan snow lotus with red date and deep fried nian gao with banana. Usually nian gao is served with sweet potato or yam, serving it with banana worked extremely well too.

It doesn't need to have that offensive stuff...and for all you know, you could be paying through your nose for some plastic imitation. Ooooo...love the crockery! So very nice!

    1. I have not tried Hakka lei cha before but have been told it can taste offensive to certain ppl cos of its strong tasting sauce. The chef has tone down the sauce here, I really liked this yee sang. One of my favs this yr.

  5. very unique dishes for CNY especially the Lui Cha Yee Sang! Love to try that cos I am a huge fan of lui cha... two Yee Sangs at a go.... double HUAT!! ;)

  11. marble goby fish! I'll have to remember that name next time I write up on soon hock..lol. Hey fish doesn't have to look pretty. It's the taste and texture that counts. =D
