Since we plucked lots of strawberries, I made a nice summer's salad for lunch - strawberry, feta and rocket salad. Juicy strawberries with a tangy dressing and creamy cheese - absolutely lovely! Try this the next time you get your hands on some strawberries.

Strawberry, feta and rocket salad
Recipe by Baby Sumo
Preparation time: 2-3 minutes
Serves 2
Ingredients
A large handful wild rocket leaves
15-20 strawberries, washed and sliced
50g feta cheese
4-5 basil leaves, thinly sliced
For the dressing
4 tsp extra virgin olive oil
2 tsp white balsamic vinegar
1. To make the dressing, place oil and vinegar in a small bowl and whisk to mix well.
2. In a larger bowl, place the strawberries and rocket leaves and toss with the dressing. Crumble the feta cheese all over and garnish with basil. Serve.
