Recipe: Foie gras with apples

Usually, we would have foie gras with caramelised apples, however we were inspired to try this with raw apples after we had it at Saveur. Super easy (just slicing the apples and cooking the foie gras) and it's pretty tasty.

Foie gras with apples

Preparation time: 2 minutes
Cooking time: 7 minutes
Serves 2

1 green apple
2 pieces foie gras

1. In a saucepan, heat over high heat. Once the pan is very hot, add the foie gras and sear for 1 minute each side. Remove from pan and place on baking tray and place in a preheated oven (180°C roast mode) for 6 minutes.

2. Slice the apples thinly (into matchsticks) then arrange on plate. You can squeeze some lemon juice over the apples to avoid browning (if you're cutting it in advance). Place foie gras on top of apples. Serve.
