Apple slaw was the first thing that came to mind when I was choosing what to make to compliment the sticky pork ribs. In fact, slaw (also known as coleslaw) goes well with almost all types of meat (esp from the BBQ or grill) and fried chicken.
Slaw is made primarily from shredded raw cabbage and dressed in mayonnaise and cider vinegar. I chose to use both white and red cabbage for a color contrast as well as Granny Smith apples, walnuts, raisins and cranberries. Doesn't it look festive?
Appealing, tart and appetizing, this definitely went well with the pork ribs. You can use low-fat mayonnaise for a healthier version.

It looks good but is it sour since you use green apple ?
ReplyDeleteJust a little tart... but there are other components in this coleslaw hence it's not overpowering. You can always replace with red apples if you feel green ones are too sour.
DeleteVery creative! I would love to have a bite of the refreshing crunch of Apple-slaw!
ReplyDeleteThis looks very good, perfect side dish for any roast!
ReplyDeleteThis is interesting! Something different from the ordinary coleslaw. Will try it someday! Thanks :-)

ReplyDeleteThis recipe is REALLY timely and I'm not kidding! My kids love granny smith (I still don't' know why they like so much - I'm a fuji fan...) and we bought a big bag of it... since they are the only one who eat, I need to use up those apples soon. Then I see your recipe! I have everything in my kitchen, so this is going to be a part of our dinner! Thank you!!!
ReplyDeleteNami, I'm also a Fuji fan... but my kids also love Granny Smith apples esp my son. :P
DeleteThis looks refreshing and delicious, would love to try this somtime.
ReplyDeleteYen, I love coleslaw with grilled/roasted meats and even curry. This combination with apples and raisins would be a nice variation from the usual cabbage only coleslaw.
