I enjoy baking cupcakes as they are easy to make and always turn out lovely and moist. Instead of the usual cream cheese frosting, I wanted to try a different one this time. With a peanut butter-loving friend in mind, I decided on peanut butter frosting on chocolate cupcakes.

I baked using my usual chocolate cupcake recipe since it is fail-proof. I substituted the granulated sugar with caster sugar for a smoother texture. These cute paper cup liners hold slightly more batter, hence baking time was increased slightly to 22 minutes. When you bake, you should keep an eye on your cupcakes - around 16-18 minutes, you can insert a skewer and if it comes out clean, that means your cupcakes are ready. If not, bake for a little longer. It all depends on individual ovens and settings.

Most recipes use a lot of icing sugar in their peanut butter frosting. Since the cake itself is already quite sweet, I tweaked the recipes and made my own version - the basic ingredients you need is butter, peanut butter, vanilla extract, icing sugar and milk/cream. This frosting will definitely appeal to peanut butter lovers as the ratio of peanut butter that I used is high, with minimal icing sugar - so this frosting is salty more than sweet. But you can always adjust the level of sweetness according to your own tastebuds.

And the test to whether this chocolate cupcake with peanut butter frosting is a success? Give it your kids and they will reward you with a huge smile if it's good, followed by "mummy, can I have another one PLEASE?"

Chocolate cupcakes with peanut butter frosting
Preparation time: 20 - 30 minutes
Cooking time: 20 - 25 minutes
Makes 12

Ingredients
For chocolate cupcake
175g all purpose flour, sifted
2 tbsp baking powder, sifted
1/2 tsp salt
50g cocoa powder1 cup boiling water
113g unsalted butter, softened
200g caster sugar
2 large eggs
2 tsp vanilla essence or extract

For the peanut butter frosting
45g butter, softened at room temperature
140g smooth peanut butter
1/2 tsp vanilla extract
25g icing sugar, sifted
2 tbsp whipping cream (or double cream)



1. Preheat oven to 190°C. Line 12 muffin cup tray with paper liners.

2. Stir the hot water and cocoa powder and let it cool to room temperature.

3. In a bowl, sift the flour, baking powder and salt and leave aside.

4. In a separate bowl, beat the butter and sugar using an electric / hand whisk for 2 minutes on medium speed until light and fluffy.

5. Add the eggs, one at a time to the butter mixture and beat until smooth.

6. Add in the vanilla essence or extract and mix.

7. Next, add in the flour mixture and beat until incorporated. Finally, add in the cooled cocoa mixture and stir until smooth.

8. Fill each paper cup until 3/4 full and bake for 20-25 minutes until risen and springy to the touch, and a skewer inserted into the centre comes out clean.

9. Remove from the oven and leave on a wire rack to cool.

10. To make the peanut butter frosting, mix the butter and peanut butter together with a spatula until well combined.

11. Add the vanilla extract and mix. Then, add the sugar gradually until incorporated. I would recommend that you start with 15g, and gradually add more to taste. Most recipes will ask for 1 cup of icing sugar (approx 125g) but that is definitely way too much for me. Each time you add more icing sugar, mix it well and then taste it to see if it's sweet enough for you.

12. Using a piping bag with a star tip, swirl the frosting on the cupcakes. Decorate with some white edible pearls.

13. These cupcakes can be stored in an airtight container for a couple of days in the fridge.

Weekend Tapas Brunch @ DISH KL

DISH recently started their weekend tapas brunch and we were there this weekend with a BIG APPETITE to try it all. The weekend tapas brunch consists of 35 items, including 5 egg dishes, 3 types of croquettes, 3 types of soups, 5 salads, 3 pasta/risotto, 4 meat dishes, 3 fish dishes, 2 vegetarian, 3 shellfish dishes and 4 desserts. We tried them all except for the croquettes, vegetarian and also missed out on one of the egg dishes. Click here to see the full menu (page 1 and page 2).

The price? RM99++ per adult, including juices, coffee and tea or the alcoholic brunch for RM179++ which includes free flow Tiger beer, red, white, sparkling wine and juices. Children between the ages of 6-12 years old pay RM49++.

What I love most about the weekend brunch is the VARIETY. You can practically sample most of Chef Steve Allen's best creations - some which I have previously tried and loved from his a la carte menu as well as set lunch menu. They are all served in small tasting portions, hence you are able to try quite a few from the list. The ordering is simple - each person is allowed 5 items per order (to avoid wastage and over-ordering) and it worked out nicely for us.

This will be a photo-heavy post since I am posting photos of the 29 dishes that I managed to try, hope you will enjoy browsing through them :) Steve has mentioned that some of the items will be changed weekly for even more variety for customers.

"Fantastic, says Baby C..."

Let's start with the egg dishes. Organic eggs are used in these dishes. The poached eggs in both the eggs benedict and poached egg with tomato are beautifully cooked - pierce it and you will be rewarded with runny yolks. Baby C ate almost a whole eggs benedict dish... exclaiming that "it's very good". And then the unassuming boiled egg with foccacia soldiers arrived - she kept it all to herself, finished it all, licking it clean and said to us (and also to Chef Steve Allen), "This is fantastic". I don't think I've ever heard her use that word to describe something she's eaten before. It's great that something so simple (and well-prepared) can be so satisfying, even to a young child.

I've tried the pumpkin soup before during my last visit, and told my mum that she will love it. And she did! It was rich and creamy, with the lovely scent of truffle oil. The tomato and lemongrass consomme is served cold, and tastes quite appetizing due to the tangy tomato. I did not like the French onion soup, as I found it too salty for my liking.

Out of the five salads, my favorites are the avocado and crab salad and the citrus cured salmon, pickled beetroot and horseradish ice cream (previous visit here). Both my parents enjoyed the latter very much. Surprisingly, the French bean, snow peas and sambal salad was also a huge hit - my parents wiped the bowl clean, as the sambal was nicely executed, slightly sweet-spicy.

Usually I won't order rice or pasta but for the sake of trying all the items off the brunch menu, I did. The carbonara with beef bacon was nice but definitely very filling. The portions for the pasta/risotto are quite big compared to other dishes. I've eaten the tomato risotto before and it's still good.. I ate 1 plate and my mum finished 1 plate. Since dad prefers something less rich, I ordered the coriander linguine for him ... mum also sampled some and liked it, the lime definitely gave this dish a nice zing.

We were happy with all the mains from the brunch. For the mini steak, you can choose between striploin and ribeye served with a choron sauce. We loved the lamb wellington with pepper sauce. The dark horse was definitely the paprika chicken, which initially we weren't too keen to order. But I was glad I did, since the chicken was really moist (and looked really glossy when it arrived at our table) and the accompanying sweetcorn and mushroom sauce was very flavourful. The mini burger was absolutely adorable, and the kids were totally in love with it. At first, we also didn't want to order this since we thought it may be big, but we got a sneak peek when the mini burger arrived at our neighbour's table and Baby C said she wanted one of those too!  It was mighty tasty too.

The three fish dishes on the brunch menu is very good too. I usually dislike eating "cooked salmon", and only like raw or smoked salmon. But the pan fried salmon here was very good, as it was not cooked through, hence the flesh in the centre was still slightly raw and melt-in-the-mouth. We had to order another portion of this. The salt baked cod which I had during my first ever visit to DISH was as good as I remembered it, for this we had 4 portions LOL.

Under the shellfish section, my dad enjoyed the grilled tiger prawn as the prawns were quite big and juicy. We had several helpings of this as well as the mussels with apple and cider sauce.

Desserts were the highlight of both the kids and adults. The kids were served a scoop of complimentary raspberry ice cream each. I told my parents that they have to try the caramel chocolate delice as that is our all time favourite dessert here. We ended up having four portions of that. ;) The strawberry mousse with granite and jelly was served separately this time - Baby C got hold off the jelly while Baby D took the mousse.. not sure where (or rather who's mouth) the granite disappeared to. LOL. We also love the green guava crumble and almond panna cotta.

Verdict: We enjoyed the weekend tapas brunch immensely. The only problem is I think I've put on at least 2 kg after walking out of DISH that afternoon. LOL.
