The Fast Forward 2-Minute Ice Cream

We first discovered this amazing instant ice cream when we harvested a huge bunch of bananas from our garden. Although we were having bananas after breakfast, lunch and dinner for dessert, there were still loads of bananas left. So what do you do when you have lots of overripe bananas? Peel them and freeze them!  It is always handy to have some frozen bananas in your freezer, so you can make instant banana ice-cream whenever you feel like having some.

Once the bananas are completely frozen, place them in a blender or food processor and blend for 2-3 minutes until you get a creamy consistency - yes it's that easy and fast to make your own ice cream! No ice cream maker is required and you can fast forward the ice-cream making process which usually takes about 30 minutes with the ice cream maker!

Pass the spoons around and dig in! This has to be one of our favorite kitchen hacks - a smooth, creamy and healthy ice cream in 2 minutes.

Recipe by Baby Sumo
Preparation time: 2-3 minutes
Serves 4

Ingredients
6 frozen ripe bananas

1. Put the frozen bananas into a blender or food processor and blend for about 2 minutes, until you get a creamy ice cream. Serve immediately. You can sprinkle on your favorite toppings such as toasted nuts and chocolate chip.

Note:
1. Peel the bananas and then chop them into 3, place in a plastic container and into the freezer for about 3 hours, until totally frozen. It will keep well in the freezer for a few months.
2. The instant ice cream cannot be stored back in freezer, as it will freeze solid and become impossible to scoop.
