Recipe: Creamy Spinach, Mushroom and Bacon Pasta

BabySumoKids love for pasta is real.... even on vacation, they would request for pasta for their lunch and dinner. It's a great time for me to explore new pasta recipes too, with quality ingredients easily available.

I made this creamy spinach, mushroom and bacon pasta for them earlier this week and they loved it! Something you can easily whip up in under 20 minutes ;)



Creamy spinach, mushroom and bacon pasta
Recipe by Baby Sumo
Preparation time: 2-3 minutes
Cooking time: 15 minutes
Serves 4


Ingredients
350g spaghetti
150g bacon lardons or streaky bacon, diced
3 tbsp extra virgin olive oil
1 small onion, peeled and diced
1/2 pack (90g) baby spinach
1/2 pack (150g) white button mushrooms, sliced
1/2 tsp chicken stock granules
3-4 tbsp single cream
Freshly grated parmesan
Salt

1. In a large pot of salted boiling water, cook the pasta over medium high heat for 8 minutes, or until al dente. Drain and set aside.

2. In a large frying pan or wok, heat the oil over medium high heat. Add the bacon and cook for 4-5 minutes, until crispy and golden brown. Remove from heat and set aside.

3. Add the onion and saute for 2 minutes until softened. Then, add the mushrooms and saute for 2 minutes, then add the spinach and cook until they've wilted.

4. Add about 3-4 tbsp of pasta water (from Step 4) and season with the chicken stock granules. Then, add the pasta and toss well. Then, pour in the cream and toss again. Add more olive oil, if necessary.

5. Serve with generous amounts of Parmesan cheese and crispy bacon.

Amarone Aberdeen, Scotland - Sunday Lunch

Amarone is a restaurant in Aberdeen serving both traditional and contemporary Italian cuisine. We came here one weekend to have Sunday Lunch with the in-laws. You can choose to have 2-courses for £15.95 or 3-courses for £18.95.  For the full menu, please click here.



For starters, Hubby had the Parfait di Pollo, homemade chicken liver parfait with apple and thyme chutney, served with toasted crostini. This was good and portion was generous- we enjoyed it. I had the Capesante Con Pancetta (Supplement £3.00), seared Scottish king scallops wrapped in pancetta and served with a slow roast tomato and chilli dressing. It was tasty enough but the scallops were pretty small and not great value, considering I had to pay extra £3.




For mains, most of us had the Arrosto di Manzo, roast sirloin beef with Yorkshire pudding, seasonal roasted vegetables and roast potatoes served with a red wine jus. The beef was tender and delicious.




My MIL had the Pollo Funghi e Pancetta, Supreme of chicken served with a basil cream, pancetta and mushroom sauce served with sautéed potatoes.



Our kids fancied pizza, so we ordered a Margherita pizza (£9.45) for them. The pizzas here are made to order - simple and good!




For dessert, we had the Affogato and Tiramisu. Overall, we had a great meal here, and the ambiance is lovely too.
