Recipe: Spicy Garlic Prawns with Cashew Nuts

Prawn is a must-have ingredient during Chinese New Year as it symbolises laughter and happiness. During Chinese New Year, we will usually get large prawns such as these.

Spicy Garlic Prawns



This is a delicious Spicy Garlic Prawn recipe which you can try making at home.Simply toss your prawns in some garlic powder, chilli flakes and oil. Cook until crispy and then toss in garlic-oil sauce along with some salted butter. I also added some toasted cashew nuts as their shapes look like gold ingots and spring onion which is a symbol for spring.

Since you will be shallow frying your prawns in oil, it is much better to use garlic powder than raw garlic in this recipe as it will not burn when you fry them. Furthermore, the lovely garlic flavours are infused into the shells and sauce. Super easy yet finger licking good - try it!

Spicy Garlic Prawns
Recipe by Baby Sumo
Preparation time: 5 minutes
Cooking time: 15-20 minutes
Serves 4

Ingredients
10 large prawns, trimmed
4 tbsp cooking oil
1 tbsp garlic powder
1/2 - 1 tsp chilli flakes
A pat of butter
1/8 tsp salt
A large handful toasted cashew nuts
1 stalk spring onion, green parts only, cut into 1"lengths

1. In a bowl, mix 2 tbsp cooking oil, chilli flakes and garlic powder. Add prawns and toss to coat. 

2. In a large pan or wok, heat 2 tbsp oil over medium high heat. Once oil is hot, add prawns, depending on the size of your pan, and cook until prawn is crispy. Remember not to overcrowd your pan. Cook in a few batches until all prawns are cooked. Once ready, remove from pan and set aside.

3. To the same pan, add butter and also the garlic-chilli oil from Step 1. Toss the cashew nuts and season with salt. Add cooked prawns back and toss in the sauce. Add spring onions and cook for a further minute. Serve.

Recipe Video: Stir Fried Scallops with Sugar Snap Peas

Here's another easy recipe for Chinese New Year and beyond! Scallops symbolises new opportunities, so is a great dish to serve during CNY. We also regularly cook this for our weekday meals cos... it's easy to cook and will be ready in less than 10 minutes.

For this recipe, we like using medium-sized scallops. They cook in a minute; remember not to overcook cos scallops, like many other seafood, shrinks and becomes rubbery when you cook them for too long.

Recipe: Sambal Udang (Prawn Sambal)

Our family loves eating nasi lemak, and since MCO started last year, I've made it countless times at home - either served with beef rendang, chicken rendang, ayam masak merah, sambal sotong or sambal prawns. Always satisfying, I guess you can call it our "happy meal".

One of my personal favourites is this sambal prawn, using these small and sweet prawns from Sungai Besar. The sambal is sweet and spicy, and is absolutely delicious spooned onto the rich coconut rice.

Sambal prawns (sambal udang)
Recipe by Baby Sumo
Preparation time: 5 minutes
Cooking time: 20 minutes
Serves 4

Ingredients
300g peeled prawns
2 tbsp cooking oil
1 large yellow onion, halved and finely chopped
2 tbsp cili giling
300ml water
1/2 tsp caster sugar
1/2 tsp salt
1 tbsp tamarind pulp
1/2 tsp chicken stock granules 
4 kaffir lime leaves, snipped

1. Soak tamarind pulp in 100ml of water. Remove seeds and set aside.

2. In a wok or pan, heat the oil over medium high heat. Add onions and cook for 4-5 minutes, until slightly softened. 

3. Add cili giling and saute for a few minutes, until fragrant. Then, add 200ml water, tamarind juice (from Step 1) and kaffir lime leaves. 

4. Season with sugar, salt and chicken stock granules. Simmer on medium heat for 10 minutes.Add more water, a little at a time, if sambal looks dry.

5. Add in prawns and cook for about 1-2 minutes, depending on size of prawns. Serve with coconut rice, crispy ikan bilis, toasted peanuts, fried egg/boiled egg and acar jelatah/ sliced cucumber.

Recipe: How to Make Vegetarian "Abalone"

On the first day of Chinese New Year, our family will eat vegetarian food for the day. Usually, for the first meal of the new year, we will cook "jai"素 as well as a few other vegetarian dishes containing auspicious ingredients such as mushrooms, carrots and fatt choy (black moss).

Abalone, is a popular ingredient during Chinese New Year as it symbolises definite good fortune. It is however not vegetarian, so we actually made these look-a-like, mock vegetarian abalones using eryngii mushroom for the first day of CNY. 

Eryngii, also known as king oyster or trumpet mushroom have thick meaty stalks, with texture which has been likened to abalone. I first pan fried the "abalone" in some butter to give it some colour and then braised it with vegetarian oyster sauce... it was delicious! So, from next year onwards, we can have "abalone" on the first day of Chinese New Year!

How to Make Vegetarian Abalone
Makes 8 "abalones"

Ingredients
200g eryngii mushrooms 
A pat of salted butter
Vegetarian oyster sauce, to taste
150ml water

To serve
A few broccoli florets
Chinese mushrooms

1. Slice eryngii mushroom stalk, about 2.5cm thick. Get an oval cutter which has a smaller circumference than the mushroom. Using the oval cutter, press down in centre of the mushroom stalk, to about 5mm of the height of the mushroom. Next, using a knife, trim off about 5mm from top to the outer edge of oval cutter to get the abalone shape. If you do not have an oval cutter, you can manually cut out the oval shape using a knife.

2. Place butter in pan over medium heat. Add mushrooms, cook for 2 minutes, then flip and cook the other side for another 2 minutes.

3. Add water and vegetarian oyster sauce, and braise for about 5-10 minutes. Serve your "abalones" with braised mushrooms and steamed broccoli.

How to Cook Steamed Fish Chinese-Style

I've been getting lots of DMs on Instagram for steamed fish recipe (especially when I share pictures of the steamed fish that we have during Seafood Sundays). So, we made a recipe video on how to steam a whole fish with soy sauce, Chinese-style.

For this recipe, I have used a whole threadfin fish (also known as senangin or ma yau). The weight after gutting is around 500g. I recommend steaming a whole fish of this weight around 12-15 minutes... to test if it's ready, use a skewer or chopstick, and poke the thickest part of the fish and it should go all the way through easily. 1 whole fish, around 450g-500g, cleaned and gutted
2 slices old ginger, about 1cm thick
1 inch old ginger, julienned
2 tsp ginger wine
2 tbsp light soy sauce
2 tbsp cooking oil
2 cloves garlic, finely chopped
White pepper
Spring onions, for garnish

1. Yee Sang

A CNY celebration is not complete without a round (or two or three) of lou sang. Toss to prosperity, fortune and good health with one of these takeaway yee sang (get them delivered right to your doorstep) or make your own cute "Cow Yee Sang" to usher in the Year of the Ox.

The food were nicely segmented in bento boxes and arrived piping hot. We were most impressed with the thickly cut salmon sashimi slices, crispy yet light tempura and tasty unagi.

There is also a MCO Set Menu, with prices starting from RM45. Choose from Sashimi moriawase, Wagyu sukiyaki nabe, Wagyu teppanyaki, Gindara yaki, donburi, udon, soba and many more. I miss my bara chirashi, so I was happy to see it on the delivery menu.

Recipe Video: Soy-Braised Chicken Wings

During Chinese New Year, a whole chicken is commonly served at the reunion dinner as it represents prosperity and togetherness of the family. Since this year's celebration will be much smaller due to the MCO SOPs, you can opt to serve chicken parts, such as chicken wings, which is said "to help you fly higher for the new year".

Golden Valley KL is offering Halal Poon Choy during the festive season, available for both delivery and takeaway. There are two types of Poon Choy available - the 18 Treasure Poon Choy and the Prosperity Poon Choy - in small (3-5 pax) or large (8-10 pax) portions.

The 18 Treasure Poon Choy consists of tiger prawns, fish maw, dried oysters, steam chicken, Hokkaido scallops, shitake mushroom, fatt choy, bean curd, fish paste tofu puff, brocolli and more. Priced at RM148 for small, RM248 for large. There is also a Prosperity Poon Choy which comes with abalone, priced at RM198 for small and RM368 for large. There is also an option to change the chicken to roast duck for a small fee (RM25 for small and RM50 for large). 







Toss to good health and fortune with Golden Valley's Prosperity Yee Sang, made using all natural ingredients such as carrot, radish, beetroot, red cabbage, pomelo and more, with toppings such as jelly fish, snow pear, salmon and abalone.
