In line with the upcoming Chinese New Year, Kim Ma Restaurant at Palace of the Golden Horses will be presenting three "Fortune Set Menus" created by Executive Chinese Chef Chris Lim and his team, priced from RM1088 nett onwards throughout the month of January and February 2018.
We had the pleasure of sampling their Chinese New Year Set Menu 1, an 8-course meal priced at RM1,088 nett per table of 10 persons. Diners have the choice to start their meal with either the Norwegian Salmon and Top Shell Prosperity Yee Sang or Kim Ma Signature Double Hot and Cold Appetizer Combinations.
This will be followed by a comforting bowl of Kim Ma's signature Double boiled minced chicken broth with superior fish maw and shimeiji mushrooms. It was interesting to learn from Chef Chris how the soup was made; first chicken breast is trimmed, frozen and minced until very fine, and then added to a superior stock (siong tong) when cold and double boiled for about half an hour, which gives its unique texture (clear soup with a custard-like chicken mousse).
Hubby's favorite dish of the day is the Cantonese-style smoked salted free range chicken. The meat was tender and full of flavour, and has an intense smokiness which we love. The chicken is smoked with Chinese tea leaf (Chef Chris uses tie guan yin) along with rice and flour in a wok.
The Traditional steamed river cat fish with superior soy sauce was nicely done, simple and good.. Great way to enjoy the fish's natural flavours.
My personal favorite was the Stir fried large tiger prawns with Chef's special Mongolian sauce. The sauce was really good; unfortunately I didn't get the secret sauce recipe from the chef except that it contains black pepper and condensed milk.. but trust me, you have to try this! You'd be licking your fingers when you're done with this course.
The Assorted Mushroom Dumplings were made into the shapes of money bags, so they're auspicious (exactly what the Chinese like to see during CNY). Filled with turnip, carrot and mushrooms, they're served with broccoli and a smooth pumpkin sauce.
We enjoyed the Steamed mini glutinous rice parcels, wrapped in lotus leaves with roasted duck and dried shrimp. They're just the right size and the texture of the rice was soft and sticky. Yum.
One of the things I look forward to eating to most during CNY is the nian gao (New Year cake). The nian gao is made in-house, steamed and then coated in fresh coconut. It is served with ma lai gao (Malay cake) with salted egg yolk layers and a Double boiled pineapple and water chestnut with peach jelly dessert, for a sweet end to the meal.
