We were invited to sample their delightful Prosperity set menu, starting with the yee sang of yellow fin tuna and salmon. The yee sang incorporates fresh vegetables such as shredded carrot, radish, lettuce as well as rocket, hence making it light and fresh tasting.
The double boiled soups here are always a delight to savour, this time Chef Ricky Thein has created a nutritious double-boiled abalone soup and sea cucumber with morel mushrooms and maca. Maca is a medicinal herb originating from Peru, which is nourishing and good for fertility.
Next, we had the steamed Omega rich grouper with chopped chilli paste and ginger parsley paste. Both paste were spicy and fragrant, and went well with the fresh, flaky fish with gelatinous skin.
The corn fed chicken is marinated and poached, and then served with Chef's creation dipping sauce along with finely grated ginger and spring onion. A popular Cantonese dish which we love!
Lai Po Heen's CNY "Fatt Choy" sun dried seafood pot features large fresh scallops, abalone, fish maw, mushroom and pak choy. Presented in a claypot, it was both luxurious and delicious!
For the rice dish, Chef Ricky uses healthy grain rice which is fried with golden pumpkin and sea treasure consisting of prawn, dried oyster and dried scallop. The rice was full of wok hei and tasted great.
The chilled osmanthus jelly with crunchy water chestnut cake was a light, refreshing end to our meal.
