I only snapped one photo of this dish for Instagram as I wasn't planning to post a recipe for this. But it turned out really nice and the kids enjoyed it so much that I decided after that meal that I should blog about it so other mommies can try this for their kids. A really simple and easy one to do!
I added in sliced zucchini as well as some carrots (to get the kids to eat more vegetables) and minced chicken to the pomodoro (tomato in English) sauce. Simply simmer for about 10 minutes (the time you require to cook your spaghetti) and dinner is ready! We garnished our pasta with some homegrown sweet basil leaves and generous shavings of Grana Padano (or Parmesan).
Spaghetti Pomodoro with Zucchini and Chicken
Recipe by Baby Sumo
Preparation time: 10 minutes
Cooking time: 15 minutes
Serves 4
Ingredients
300g spaghetti
1 jar (500g) traditional pasta sauce
2-3 tbsp extra virgin olive oil
4 cloves garlic, finely chopped
1 zucchini, sliced
200g chicken breast, minced
1/4 carrot, cubed (optional)
Sweet basil
Salt and freshly ground pepper
Grana Padano or Parmesan, to garnish
1. In a large saucepan or wok, heat the olive oil over medium high heat. Add the garlic and saute for about 1 minute, then add the chicken and cook for 2-3 minutes.
2. Add the zucchini and carrot, and saute for a further 2 minutes. Then, add the tomato sauce and bring to the boil. Then, lower to medium heat and simmer for about 10 minutes. You can add about 1/4 cup of water if you prefer to have more sauce. Season with salt and pepper.
3. In a separate pot, bring a pot of salted water to the boil over medium high heat. Cook spaghetti for about 8-10 minutes, until al dente. Drain and divide into 4 plates.
4. Spoon over pasta sauce and garnish with fresh basil leaves. Buon appetito! ;)

Spa Review: The Sompotan Spa, InterContinental KL
What's a staycation without a great spa treatment? Ask any parent and they will tell you that as much as school holidays are fun and rewarding but also one of the most tiring times as you are constantly on your feet entertaining the kids.So a spa is a great way of treating oneself to some well-deserved pampering.
The Sompotan Spa is located on Level 5 of the hotel and offers a wide range of massage and therapy packages. Guests can choose from Massage, Body Therapy, Face Therapy, Hand & Foot Therapy and Signature Collection for individual treatments or spa packages. Furthermore, in-house guests will receive 15% discount on selected treatments and can also have the option of having in-room spa therapies.
Hubby and I took turns to go for our spa treatment. We were both treated to the 80-minutes Natural Glow spa package (RM280). Upon arrival at the spa, I was served a hot ginger tea and then ushered to the treatment room. The treatment began with a foot bath, whereby the therapist will use salt to scrub all the dead skin cells on your feet.
I was then asked to lie on the bed and a scrub is applied on the body. The scrub is made up of organic rolled wheat with sugar granules, and will gently polish and exfoliatesthe skin while improving blood circulation, leaving the skin clean and fresh. After a quick rinse in the shower, I was then given their signature massage with their natural massage oil. So relaxing! The signature massage is based on the combination of Malay, Swedish,and Shiatsu massage techniques to heal and strengthen the body and mind, improve blood circulation and create a feeling of well-being and also alleviate muscle tension. The Malay massage, which is one of my favorites, involves deep rhythmic stroke which helps to improve vitality and reduce flatulence.
I walked out of the room feeling great and rejuvenated :) Thanks to InterContinental KL for arranging these spa treatments for us.
