Recipe: Fast fast udon (Udon with Pork Mince, Beansprouts and Mushroom)

Hubby asked what I was making him for lunch one afternoon and I answered, "Fast fast udon." "Why is it called fast fast udon?" he asked, to which I replied, "Well, it's fast to make, and it tastes so good, you'll finish it real fast too!"

Since there was not much prep to do for this dish, I managed to get this cooked and ready on the dining table in under 10 minutes. And it was so good, we took under 5 minutes to finish it all up. Definitely lives up to its name ;) I used pork mince for ease, but you can substitute with chicken or beef if you prefer. Not only is it fast to prepare, it is also a healthy and well-balanced dish.


Fast fast Udon (Udon with minced pork and beansprouts)

Preparation time: 2 minutes
Cooking time: 6-7 minutes
Serves 2

Ingredients
200g fresh udon
80g minced pork
4 cloves garlic, finely chopped
2 Chinese mushrooms, sliced thinly
2 tbsp cooking oil
200ml water
1/2 tsp dark soy sauce
1/2 tsp ginger wine
1 tbsp light soy sauce, to taste
3 spring onions, cut into 1 inch lengths
2 handful beansprouts
A dash of sesame oil

1. In a large wok or frying pan over medium high heat, add oil and garlic and cook for 1 1/2 minutes until lightly browned. Add Chinese mushrooms and minced pork, and stir fry for about 2 minutes, until pork is cooked through.

2. Add water, ginger wine, dark soy sauce and light soy sauce, and bring to the boil. Once boiling, add the udon noodles and cook for 2-3 minutes, until the noodles are cooked. Taste the seasoning, then add the beansprouts  and spring onion and stir fry for another 30seconds. Add a dash of sesame oil, stir and remove from heat.

3. Serve immediately.

Festa della Pasta Promotion @ Italiannies Malaysia

Popular Italian-themed restaurant chain Italiannies is introducing eight new pasta dishes during its Festa della Pasta promotion from now until 30 June 2013. These new pasta dishes give customers the chance to savour a selection of authentic pasta recipes which originate from various regions of Italy.

We were invited to the media launch of this promotion, whereby we were served all eight pasta dishes and two appetizers in abbondanza (sharing) portion to emulate Italiannies 'A'more di Merrier' shared menu concept while being entertained with live music. Present at the event was Mr Andrea Rossi, Regional Manager of Italiannies who explained the origins behind each dish.


Gamberi con Aglio


To start, we had the Gamberi con Aglio and Mediterranean Salad. I really enjoyed the former with its juicy sauteed shrimps in a spicy sauce made from red dried chillies, black olives and tomatoes and served with some garlic bread to soak up the lovely sauce. The Mediterranean salad comprises of black olives, cream cheese, tomatoes, onions, rocket and romaine salad served with chicken breast.

Here are the eight pasta dishes available during the Festa della Pasta promotion. My personal favorites are the mussels and clams Lombardi con pappardelle and the cheesy cannelloni.  It was also interesting to be able to try several new pasta shapes such as fileja and paccheri.

Mussels & clams Lombardi con pappardelle (RM26.90) - pappardelle pasta tossed with fresh clams and mussels cooked with white wine. Fresh herbs and chilli flakes to garnish.

Tagliatelle con Salvia, Funghi e Popettine (RM22.90) - handmade tagliatelle pasta sauteed with lemon and shiitake mushrooms served with homemade meatballs

Tagliatelle con Pesto al Pomodoro (RM22.90) - handmade plain and spinach tagliatelle pasta served with green pesto and tomatoes with grated Parmesan cheese and pine nuts

Fileja con Pomodoro e Basilico (RM18.90) - fileja pasta tossed with tomato puree and cherry tomato, sprinkled with Parmesan and fresh basil

Cannelloni (RM26.90) - cheesy cannelloni stuffed with spinach and artichokes served with homemade marinara sauce, topped with melted mozzarella cheese and bechamel sauce.

Paccheri con Ragu (RM18.90) - traditional Italian beef sauce cooked with paccheri pasta topped with Parmesan cheese

Tortellini con Salmone ed Aneto (RM26.90) - spinach and ricotta filled tortellini pasta tossed in alfredo sauce with sauteed salmon and fresh dill

Fusilli con Spinaci ed Alfredo sauce (RM22.90) - fusilli pasta sauteed with chicken breast and spinach tossed in alfredo sauce with chilli flakes and crispy spinach to garnish.


Italian trifle, made with layers of creamy mascarpone, lady fingers, dark chocolate powder and chocolate chips.

This promotion is valid at Italiannies outlets in The Curve, The Gardens Mall, Empire Shopping Centre, Paradigm Mall and Gurney Paragon, Penang.


For lunch (11am-3pm), diners can top up RM6 for a choice of either a salad (Insalata Verde), a dessert (chocolate brownie) or a glass of Pepsi with their pasta order. During dinner service (6pm onwards), with every order of a pasta dish, diners can top up RM16 for a choice of an entrée (Gamberi con Aglio), a salad (Insalata Mediterranea) or a dessert (Italian Trifle).
