Recipe: Sticky five spice pork ribs (Bill Granger)

Every week without fail, we would buy a batch of pork ribs, either to cook bak kut teh (Chinese meat bone tea) or braised pork ribs. Last week, we decided to try a different style - sticky five spice pork ribs ala Bill Granger. 



When buying the ribs, I asked the butcher to cut it for me into individual ribs for convenience. The pork ribs are then marinated for at least an hour, though if you have time overnight would be better for all the flavours to be infused. Then it is cooked in the oven until the meat is falling off the bone. During the last 10 minutes, you can increase the temperature of the oven slightly to give the meat a slight char.



Sticky and delicious, it was so good we licked our fingers clean. I served the ribs with some apple slaw (recipe here). This would be a pretty good side dish to be served for Christmas, as a side dish if you are catering for a large group.



Great with a mug of beer!



Sticky five spice pork ribs
Recipe adapted from Bill Granger
Preparation time: 10 minutes
Cooking time: 55-60 minutes
Serves 4-5


Ingredients
1.5 kg rack of pork ribs, back ribs (ask your butcher to cut into individual ribs)

For the marinade
4 cloves garlic, crushed
2 tbsp grated root ginger
8 tbsp light soy sauce
125 ml hoi sin sauce
4 tbsp honey
1 tsp Chinese five spice
2 tbsp canola oil

1. In a bowl, mix the marinade ingredients. Place the ribs in a tupperware and pour over the marinade and marinate for at least an hour or overnight if possible.

2. Preheat the oven to 180°C (roast mode).

3. Arrange the ribs in a baking tray in a single layer and pour in half the marinade. Place the tray in the preheated oven for 40-50 mins then increase the oven temperature to 200°C. Turn the ribs, brush with the remaining marinade and return to the oven for 10-15 minutes. The ribs should be slightly charred in places.

4. Serve with apple slaw.
