Recipe: Honey-Glazed Baby Carrots + Oven-roasted Zucchini + Festive Salad

I also made a few side dishes to go along with the slow-roasted leg of lamb. The objective here is to keep it easy and simple - so I opted for oven-roasted zucchini, honey glazed baby carrots and a festive raw salad. 




Honey glazed baby carrots
Recipe by Baby Sumo
Preparation time: 2 mins
Cooking time: 15 mins
Serves 6

Ingredients
1 tbsp olive oil
1 tbsp honey
1 tbsp white wine vinegar
250g baby carrots

1. Preheat oven to 190°C (roast mode). In a bowl, mix the olive oil, honey and white wine vinegar. Place carrots on a baking tray, then toss with the honey-vinegar-oil mix and roast for about 15 mins.






Oven-roasted Zucchini

Preparation time: 5 minutes
Cooking time: 10 minutes
Serves 6-8

Ingredients
2 zucchini, halved then cut into 5mm rounds
2-3 tbsp olive oil
Rosemary
Salt

1. Preheat oven to 190°C (roast mode). Place rosemary on tray and arrange zucchini on top. Drizzle with olive oil and season with salt and pepper.

2.Roast for about 10 minutes, then remove and serve immediately.





Festive Salad
Recipe by Baby Sumo
Preparation time: 5-10 mins
Serves 6-8

Ingredients
50g rocket, washed and dried
1/2 small red cabbage, thinly sliced
4 sweet mini peppers, diced
2 Japanese cucumber, diced

For the dressing
6 tbsp olive oil
3 tbsp honey
3 tbsp white balsamic vinegar
Salt and freshly ground pepper, to taste


1. Place salad in a bowl.

2, Mix the dressing ingredients together well. Just before serving, toss the salad in dressing.
