Baking Gingerbread Men Biscuits with Kids

Every year, without fail, we will bake gingerbread biscuits with our kids. They enjoy it very much and look forward to baking them and then giving them away as gifts to their friends and teachers. It's nice that this has become a family tradition for us at Christmas time.




This time, the kids made mini gingerbread men (approx. 7cm in height), hence we got about 40 of them in total. They had a really great time making them :) Well done babysumokids, they're delicious!

Do give this recipe a try with your kids, it's really easy and straightforward - have fun!



Gingerbread man "Christmas Tree" ;)





Gingerbread Man Biscuits
Recipe adapted from here
Preparation time: 30 minutes
Cooking time: 9-10 minutes
Makes about 40

Ingredients
1 2/3 cups all purpose flour
1/4 tsp salt
2 tsp baking soda
1 heaped tsp ground ginger
1/2 tsp ground cinnamon
57g salted butter
1/2 cup brown sugar
1/3 cup golden syrup (or dark corn syrup)


1. In a saucepan over medium low heat, melt the butter, sugar and syrup together until dissolved. Allow to cool.



2. Sift the flour, salt, baking soda and spices together into a bowl. Once the syrup mixture has cooled, mix into the dry ingredients to make a dough. Chill in fridge for 30 minutes.





3. Preheat oven to 375°F/190°C (no fan) and grease two baking sheets. Roll out the cookie dough to about 1/4 inch (5mm) thick. Using a 7cm gingerbread man cookie cutter, cut out shapes. Repeat until all dough is used up.

4. Place on the baking sheets, allowing a little space to spread, and bake for 9-10 minutes until golden. Remove from the oven and let cool slightly for 10 minutes on the baking tray. Transfer to wire rack to cool completely.
