Recipe: Spiced Rock Buns (Rock Cakes)

Right after making the gingernut biscuits, the kids declared "Mummy, we want to bake more stuff!"

"Okay little bosses." I quickly flipped through my recipe book to find another easy recipe and we settled on this spiced rock buns. Rock buns (or rock cakes) are a traditional British tea time treat, which are crumbly and often described as the "easiest buns in the world to make" hence are extremely popular with kids in the kitchen. Their name comes from their shape which resembles a rock.  Children also love them as rock buns also happen to be Harry Potter's favorite teatime treat.





This is a simple recipe, where all it requires is measuring the ingredients and mixing it until you get a dough which just binds together. Bake for 20 minutes, and they're ready. Rock buns are usually best eaten warm, but for this particular recipe, I find that they taste better the following day.






Spiced Rock Buns
Recipe by Baby Sumo, adapted from Baking by Martha Day
Preparation time: 10-15 minutes
Cooking time: 20 minutes
Makes 12


Ingredients
225g plain flour
2 tsp baking powder
1 tsp mixed spice
1/4 tsp ground ginger
1/4 tsp ground cinnamon
75g soft brown sugar
110g raisins or sultanas, or a mix
50ml sunflower oil
5-7 tbsp cold milk



1. Preheat oven to 200°C (no fan).  Line a baking tray with baking paper.

2.  Sift the flour and baking powder into a large bowl. Add the mixed spice, ground ginger, cinnamon, sugar and raisins, and stir well.




3. Mix the sunflower oil and 5 tbsp milk in a measuring jug, then pour into the dry mixture (from Step 2). You should get a dough which just binds together, add more milk if too dry.

4. Place tablespoonful heaps on the baking tray and bake for 20 minutes, or until golden brown. Cool on a wire rack and once cooled, store in an airtight container.

  2. Last time I had rock cakes was in the late 70's - the bakery in the little town that I was posted to made really good ones. Haven't seen any anywhere since - perhaps I should try making my own.

  4. Thank you! This is a very good recipe if you don’t want to use butter and eggs. I did one third cup sultanas and one third cup chopped crystallised ginger and cut the sugar down a little because of the sweetness of the ginger. Absolutely gorgeous. I like my rock cakes quite crunchy so I made a flat tray of one rock cake. So much you can do with this. Grew up with rock cakes in England and now make them here in Australia.
