Winter Specials at Iketeru, Hilton Kuala Lumpur

For the month of January 2020, madara, also known as tara (Pacific cod) and shirako (cod fish milt) takes the spotlight in Hilton Kuala Lumpur's Japanese Restaurant, Iketeru's specials menu.

The kitchen at Iketeru is helmed by affable Japanese Executive Chef, Masami Okamoto, who will present his signature dishes and winter seasonal menu using the finest ingredients air-flown in from Honshu, Japan.



During the winter season in Japan, one of the most sought after delicacy is tara shirako, also known as cod fish milt - the sperm sacs of an adult cod. Well loved for its rich, creamy texture, this delicacy is now available in Iketeru for a limited time only and is served in three different ways.

One of the best ways to enjoy shirako is lightly boiled (so the inside is still raw yet firm on the outside), served with a tart ponzu sauce with grated daikon and chilli. Chef Masami definitely converted me into a fan!

If you like your shirako with a firmer texture, try the Shirako Chawanmushi (RM65) or Shirako Tempura (RM85). The chawanmushi was silky smooth and steamed to perfection, crowned with shirako on top. Meanwhile, the tempura batter was light and crisp, a nice contrast to the creamy texture of the shirako.






Madara, or tara, the fish where shirako comes from, is also highly desired during the winter season. The cod flesh is delicate and flaky with a light flavour. Here at Iketeru, you can enjoy the tara in three different flavours - Tara saikyo yaki (RM128), Tara shioyaki or teriyaki (RM128) or Tara chiri nabe (RM158).

Tara saikyo yaki - Miso marinated grilled cod fish - my personal favourite! The cod fish was wrapped in ohba leave and grilled, imparting a nice aroma to the fish. I loved the robust miso marination on this flaky fish.




Tara shioyaki / teriyaki - grilled cod fish with salt or teriyaki sauce. We had the latter - both salty and sweet in flavour.


Tara Chiri Nabe - the lightest tasting of the lot - perfect for a rainy evening! You can taste the natural sweetness of the cod fish as it is cooked in a light dashi broth. The hotpot also comes with assorted vegetables, tofu, shirataki noodles and mushrooms.

  2. Can't say I like shirako, tried a couple times but still I guess is a no for me. Other stuff looks good tho!
