Recipe: Stir fried chicken with wood ear fungus, mushrooms and broccoli

It has been a while since I shared a recipe, so I thought I'd show you what I usually cook for dinner at home. We always have a soup (a must for Baby D as he can't eat his rice without soup.. :P), fried egg or omelette, a vegetable and a protein.

Today I decided to combine the vegetable and protein into one dish to save time. This is a super easy, nutritious dish you can cook for your family at home. I've added wood ear fungus (mok yee) and mushrooms for extra texture and to make it even more wholesome.

Preparation time: 5-10 minutes
Cooking time: 10-12 minutes
Serves 4


Ingredients
275g chicken breast, cut into bite-sized chunks
1 wood ear fungus (approx. 50g), soaked and sliced thinly
10 mushrooms, soaked and stalks removed and cut in half
1 broccoli, cut into florets
3 cloves garlic, minced
1/2 cup water
2 tbsp cooking oil
2-3 tbsp mushroom sauce
1 tsp chicken stock granules
1/2 tsp ginger wine (optional)


1. In a large frying pan or wok, heat the oil over medium high heat. Add garlic and saute for about 2 minutes, until lightly golden.

2. Add the chicken and cook for about 5 minutes, until the meat is browned and cooked through. Then, add the wood ear fungus, mushrooms and ginger wine and saute for a minute. Then, add the water, mushroom sauce and chicken stock granules and bring to the boil. Once boiling, add the broccoli and cover and cook for about 1 1/2 to 2 minutes.



3. Serve with rice.
