Recipe: Rice Pudding with Australian Navel Oranges

The school holidays have come to an end and BabySumoKids are back in school today. With some free time on my hands, I decided to make one of Hubby's favorite childhood desserts, rice pudding.

To complement the rice pudding, I topped it with Australian navel oranges, which are currently in season. The sweet, tangy oranges work well with the creamy, comforting rice pudding as it cuts some of the richness of the dessert. You can also add some orange zest for the extra zing.

Rice Pudding with Australian Navel Oranges

Rich, creamy and delicious!

BabySumoKids love having Australian navel oranges as an after-dinner snack cos they're so juicy and sweet. They're high in antioxidants and vitamin C so they can boost your immune system and this is especially important when kids return to school as it is common for kids to catch germs in the classroom environment.

We choose Australian produce as they're safe, fresh and of premium quality. Get some before they're gone - these fruits are best enjoyed when they're in season (May - October for navel oranges).

Rice Pudding with Navel Oranges
Recipe by Baby Sumo
Preparation time: 5 minutes
Cooking time: 25-30 minutes
Serves 4

Ingredients
300ml milk
300ml whipping cream or single cream
40g caster sugar
1 tsp vanilla bean paste
60g pudding rice or Arborio rice
1 navel orange

1. Pour the milk and cream into a large saucepan and place over a medium heat. Add the sugar and vanilla bean paste and bring to the boil.

2. Add the rice, and stir continuously for 5 minutes, then reduce heat so that it is just simmering and cook for a further 20-25 minutes, stirring often, until the rice grains are cooked (they should be soft with a slight bite). To check if it's ready, dip a spoon into the pudding and it should be thick enough to coat the back of the spoon.

3. Remove the pan from the heat and allow to cool for 5 minutes.

4. Zest about 1/4 of the orange and set aside. Peel and dice the orange into small cubes.

5. Divide the rice pudding into four bowls/dessert cups and top with the orange chunks and zest. Serve warm/hot.

  1. Looks good. Haven't heard of this type of rice before though - can any other type of rice do? Glutinous rice, good for this?

    1. You can use risotto rice or short grain rice.

Glutinous rice, I think too sticky.
