Recipe: Serradura (Sawdust Pudding)

Whenever we bake cakes, we always have end up with leftover whipping cream after frosting the cake. Sometimes, it gets forgotten and we end up throwing it away... this time, I told myself that I cannot waste and must use it all up.

We decided to make Serradura, also known as Sawdust Pudding for our dessert one evening. Serradura is a well-known dessert in Macau (originating from Portugal), and is commonly made using whipped cream and crushed Marie biscuits. The name serradura is a Portuguese word for “sawdust”, and the pudding is named so as the finely crushed biscuits resembles sawdust.




You can actually make this with any biscuits you have on hand, such as Oreos or like we did, Tiger Biskuat biscuits (one of BabySumoKids favorite!). All you have to do is whip the cream until you get stiff peaks, and then alternately layer the crushed biscuits and cream in a glass and chill in the fridge for 2-3 hours before serving. An incredibly easy dessert to make - our kids loved it and so did we!

And best of all, it's a great way for using up whipping cream in our fridge... no more wastage. :)





Serradura (Sawdust Pudding)

Preparation time: 5 minutes
Makes 2


Ingredients
150 - 200 ml whipping cream
1 tsp icing sugar (optional)
1/2 tsp vanilla bean paste (optional)
10 Tiger Biskuat biscuits


1. Place the biscuits in a ziplock bag, and then crush until fine using a rolling pin.

2. Place whipping cream, icing sugar and vanilla bean paste in a large bowl and using an electric whisk, whip until you get stiff peaks. You may omit the sugar if you feel the biscuits are sweet enough.

3. Alternately spoon cream and crushed biscuits into a clear glass. Repeat so that you will have several layers of cream and biscuits, finishing with cream on the top layer and a light sprinkling of crushed biscuits.

4. Cover with cling film and refridgerate for 2-3 hours. Serve chilled.
