Recipe: Prawn Omelette with Sriracha Sauce

BabySumoKids love having omelette as part of their Chinese dinners. It would be one of the first dishes they attack on the dinner table. One of our favorite is prawn omelette with spring onions. You can drizzle some Sriracha sauce on top for extra heat.




Prawn Omelette with Sriracha Sauce
Recipe by Baby Sumo
Preparation time: 5 minutes
Cooking time: 5-6 minutes
Serves 3-4

Ingredients
4 eggs
1 tsp light soy sauce
3-4 stalk spring onion, green part only, finely sliced
8 king prawns, peeled and deveined
1 1/2 tbsp cooking oil

To serve
Sriracha hot chilli sauce


1. Crack eggs into a bowl, season with soy sauce and add the spring onions. Beat the eggs.



2. In a medium sized frying pan measuring 10 inches (25cm) in diameter over medium high heat, heat  the oil. Add the prawns and quickly sear, for about 10 seconds - ie prawns will change to orange hue. Remove from heat and set aside.

3. Lower heat to medium, then add the egg. Cook for about 1 minute, until the top is bubbling, then add prawns. Cook until there is still a little liquid left on the top (the residual heat will continue to cook the egg), about 4-5 minutes.

4. Remove from heat and drizzle Sriracha sauce over the omelette.
