Recipe: Burrata Cheese with Roma Tomatoes, Basil Pesto and Rocket

I fell in love with you the first time I met you, burrata. Burrata is a fresh Italian cheese made from mozzarella and cream. The outer shell is solid mozzarella, while the inside contains both mozzarella and cream, giving it a soft, creamy texture.

Prior to this, I ate burrata a few times in Italian restaurants around KL, and loved it. So I was quite happy to get my hands on some fresh burrata and make this simple burrata salad / antipasto for our Italian themed party last week. It was a real treat, and we would certainly make this again :)

Preparation time: 5 minutes
Serves 4

Ingredients
1 burrata cheese, at room temperature (250g)
2 Roma tomatoes, sliced
1-2 tbsp homemade pesto (recipe link here)
A handful rocket leaves
Olive oil


1. Arrange the sliced Roma tomatoes in a circle. Place burrata cheese in centre and dot pesto all around the plate.



2. Pile the rocket leaves on top of the cheese and drizzle with olive oil.
