Recipe: Stir Fried Pork with Chinese Mushrooms

Chinese stir fries are great when you're having a busy week. When the kids come back from school, we want to be able to cook something quick and easy and serve it within 30 minutes. 


Stir fried pork with Chinese mushrooms


I like this dish for its simplicity, yet it tastes really good. Marinating the pork in some corn starch will make the pork taste more tender. I always make sure we put in lots of mushrooms cos the kids love them.



Stir fried pork with Chinese mushrooms

Preparation time: 10 minutes
Cooking time: 8-10 minutes
Serves 4

Ingredients
350g lean pork, thinly sliced
40g mushrooms, rehydrated and stalks removed
1 inch ginger, thinly sliced
2 cloves garlic, finely chopped
2 tbsp cooking oil
2 stalks spring onion
1/2 carrot, thinly sliced
1 tsp light soy sauce
1 tsp corn starch (corn flour)
Salt or 1 tsp chicken stock granules
2-3 spring onions, cut into 3cm lengths
1 tsp ginger wine (optional)

1. Place pork in a bowl, and add the light soy sauce and corn starch. Using your hands, mix well. Marinate for 5-10 minutes.

2. In a wok, heat the oil over high heat, then add garlic and ginger and cook for 1 1/2 to 2 minutes until the garlic is golden brown and fragrant. Then add the pork, carrot and mushrooms and stir fry for about 4-5 minutes, until pork is cooked.  Season with salt or chicken stock granules and ginger wine (if using). Then, add the spring onions and cook for further 30 seconds. Serve immediately with rice.

  1. i like these kind of stir fries too, simple and quick. Marination doesnt require long duration too.
