Recipe: Chocolate Cornflakes with Hundreds and Thousands

One rainy morning, we were stuck indoors and Baby D asked if we could do some baking in the kitchen. Unfortunately we had run out of eggs so baking is cancelled. We ended up making these delicious chocolate cornflakes treats, which required no baking and is an extremely kids-friendly recipe.

All I did was melt the butter and chocolate, and Baby D did the rest of the work. These are pretty similar to the Almond Honey Joys we made before- without the sugar but with lots of chocolate goodness. We loved it so much, they were pretty much all gone by the end of the day. Thanks Baby D for making this treat for us all!

The hundreds and thousands is optional, it makes these chocolate cornflakes look more colorful and attractive but you can always choose to leave it out. I reduced the amount from the original recipe, we sprinkled just enough to make it look pretty.

Baby C had a couple when she got back from school!

Chocolate Cornflakes with Hundreds and Thousands
Recipe by Baby Sumo, adapted from Great British Chef - Dominic Chapman
Preparation time: 10 minutes
Cooking time: 3-4 minutes
Makes 12

Ingredients
50g of butter
100g of semi-sweet chocolate, broken up
3 tbsp of golden syrup
100g of cornflakes
1 tsp of hundreds and thousands, for sprinkling

1. Place the butter, chocolate and golden syrup in a saucepan over a low heat. Cook until the chocolate has melted. This will take about 3-4 minutes.

2. Line a 12-muffin tray with cupcake liners.

3. Allow the mixture from Step 1 to cool a little, then pour over the cornflakes.  Use a wooden spoon to gently stir all the ingredients together.

4. Spoon the mixture into the cupcake cases and sprinkle with hundreds and thousands. Place in the fridge to set.

Note: You can help your child melt the chocolate and butter, but they can do everything else with supervision.

  7. Yen, it is good to get kids involved. And while asking my kids to get involved, I always had to watch out if my kids have put the "raw ingredients' into the mouth! Haha. Usually, for this type of cooked ingredients, the recovery rates to become the end products are very "low"! Haha. Have a nice day.
