I cooked: Braised miso pork ribs

In our home, we cook and eat pork ribs at least once a week. We like pork ribs since it's lean and when cooked for several hours, the meat becomes really tender and falls off the bones easily. Sometimes we cook pork ribs ala bak kut teh (pork rib soup), and sometimes we braise it with soy sauce or taucu. This time, I reached out for the tub of miso paste instead. The saltiness of the miso would work wonderfully with the pork ribs, I thought.

And it did! Somehow, miso makes the dish taste earthy. The addition of carrots gave the sauce a slight sweetness, whereas the tomato added a sourish tinge and balances the saltiness of the miso well. I didn't have any daikon or white radish in the refridgerator but I reckon it would work well with this dish. This is a dish you could put together easily and be enjoyed by the whole family.


Braised miso pork ribs




Braised miso pork ribs
Preparation time: 10 minutes
Cooking time: 2 hours
Serves 4

Ingredients
500g pork ribs, cut into 2 inch length
2 onions, quartered
1/2 bulb garlic, finely chopped
8-10 Shitake mushrooms, soaked and stalks removed
1 carrot, peeled and cut into 1/2 inch length
1 tomato, quartered
1 tbsp miso paste
2 cups of water
1 tbsp cooking oil


Garnish
Spring onion, sliced thinly
Red Chilli, sliced thinly


1. In a pot, heat the oil over a medium high heat. Add the garlic and onion and cook for 1-2 minutes or until the onion has softened slightly.

2. Add the pork ribs and brown the meat slightly. Then, add the tomato, mushrooms, miso paste and water and bring to boil.

3. Then, turn down the heat to low and simmer for 1 1/2 hours. Half an hour before the dish is ready, add the carrots to the pot. You can add the carrots in with the tomatos / mushrooms etc, but it might become a little too soft.

4. Remove from heat and serve immediately with boiled rice. Garnish with spring onions and chilli.

  3. Thanks for sharing the recipe! It sounds good, other than cooking with soy sauce or teriyaki, I can now try it with miso paste! Hehe, will experiment it in the kitchen. =)
