I baked: Chocolate chip cupcakes

Hubby had been working hard in the garden all morning, so while he was working, I baked some of these delicious chocolate chip cupcakes for his tea break. Oooh, how I love the smell of cupcakes baking in the oven!

These little beauties were fluffy and moist on the inside with a crunchy golden top. Needless to say, they were all gone by the end of the day!!



Chocolate chip cupcakes
Preparation time: 20-25 minutes
Cooking time: 18-20 minutes
Makes 12

Ingredients
2 cups self raising flour
1/4 tsp salt
3/4 cup caster sugar
125g softened butter
2 eggs
3/4 cup milk
1 tsp vanilla essence
1/2 cup chocolate chips


1. Preheat oven to 200°C.

2. Sift the flour, salt and caster sugar into a mixing bowl.

3. Add butter, eggs, milk, vanilla essence and chocolate chips and mix thoroughly.

4. Line a 12-cup cupcake tin with paper cases. Fill the prepared cups two-thirds full.


5. Bake for 18-20 minutes until golden brown.


Baby C enjoyed watching the cupcakes baking in the oven (but not as much as she enjoyed eating them :-P)



6. Let stand for 10 minutes before turning out.

These chocolate chip cupcakes are best eaten warm with a glass of cold milk :-)
