Recipe: Salmon & Jellyfish Yee Sang

This year, we've done a fair bit of prosperity toss, aka lo hei at our CNY food reviews. However, yee sang is still a MUST HAVE during the CNY period at home with the family.

Our homemade yee sang this year is dubbed "7-11 Yee Sang" as it is made up of a total of 11 ingredients (fresh fruits, vegetables and a few Japanese ingredients), made on the 7th Day of CNY (Renri). The ingredients include radish, carrots, cucumber, green and red coral lettuce, green seedless grapes, pineapple, Korean strawberries, jellyfish, marinated seaweed and salmon sashimi. Crushed peanuts and sesame seeds as well as TamTam crackers are added to signify "a floor full of gold", and our homemade dressing is poured over the yee sang before the toss.

Light and refreshing, my family enjoyed the yee sang very much.... in fact I've never seen a yee sang cleared off a plate so fast! The chuka kurage (marinated jellyfish) was a nice addition to our 2017 yee sang as it adds a nice, crunchy texture to the salad.

Salmon and Jellyfish Yee Sang
Recipe by Baby Sumo
Preparation time: 30 minutes
Serves 4-6

Ingredients
1/5 radish, peeled and julienned
3/4 carrot, peeled and julienned
1/2 Japanese cucumber, peeled and julienned
A handful red coral lettuce
12 seedless grapes, washed and halved
1 pack chuka kurage (marinated jellyfish)
2 slices pineapple (canned), cut into chunks
1 pack chuka wakame (marinated seaweed)
5 Korean strawberries, tops removed and sliced
A handful green coral lettuce
7-8 sashimi-grade salmon

Condiments
1 pack (16g) Tam Tam crab flavoured snack
1/2 cup peanuts, crushed
2 tbsp toasted white sesame seeds


For the dressing
3 tbsp extra virgin olive oil
2 tbsp white balsamic vinegar
2 tbsp honey
1 calamansi lime



1. For the dressing, place oil, balsamic vinegar, honey and lime juice in a bowl and mix well.

2.Arrange the julienned vegetables and fruits on a large plate in an attractive manner. Then, place the salmon in the centre of the plate. Place crushed nuts, sesame seeds and crackers in the centre, and the dressing is poured over the yee sang. Toss, shouting out "good wishes" and enjoy!


Note: To assist with julienning the vegetable, get the julienne peeler from Daiso... so handy and does the job really quickly!

Note 2: For those who do not have white balsamic vinegar, you may substitute with extra 3-4 calamansi limes. The sauce should taste sweet and sour.
