Recipe: Longevity noodles with prawns, leeks and tofu pok in soup (CNY)

During CNY, longevity noodles (aka sau mein 壽麵) is often eaten as it represents a "long life". One of the ways we would cook it is to serve it with soup, along with several other auspicious ingredients.

This is something I grew up eating - my grandmother as well as mum would often cook this for us, usually for CNY lunch or a light dinner. It is a nice, welcoming change after all the heavy feasting during the reunion dinner and CNY meals.

With our noodles, we would add chicken slices, tofu pok, sliced Chinese mushrooms, enoki mushrooms, leeks, cabbage and prawns. A bowl of noodles representing wealth, longevity, prosperity and happiness ;)

Longevity noodles with prawns, leeks and tofu pok in soup
Recipe by Baby Sumo
Preparation time: 15 minutes
Cooking time: 15 minutes
Serves 4

Ingredients
250g longevity noodles
1.5l water
1 chicken stock cube
2 tbsp cooking oil
6 cloves garlic, finely chopped
6 Chinese mushrooms, rehydrated and sliced
100g chicken breast, sliced thinly
8 prawns, peeled and deveined
5 leeks, trimmed and sliced at an angle
1 pack tofu pok
2 packs enoki mushroom
3 cabbage, sliced

Condiment
6-8 cloves garlic, finely chopped
5-6 cili padi, deseeded and chopped
Soy sauce


1. In a large wok,  heat the oil over medium high heat. Add the garlic, and cook for 2 minutes, until lightly browned. Then, add the Chinese mushroom and stir fry for about 1 minute. Add the water and dissolve the chicken stock cube and bring to the boil.

2. In a separate pot, bring a pot of water to the boil, then cook the noodles for 2 minutes. Remove and drain.

3. To the wok, add the tofu pok and cook for 2 minutes, followed by the chicken and leeks (white part) and cook for 2 minutes. Then, add cabbage, leeks (green part) and enoki mushrooms, as well as cooked noodles and prawns and cook for another 1-2 minutes.  Finally, taste and season with salt as required. Divide into bowls and serve with a condiment of garlic, chilli and soy sauce.

    I don't think I've ever eaten longevity noodles in soup. Usually it is stir-fry. Thanks for sharing! :)
