Recipe: Avocado baked eggs + Mashed avocado

We think avocados are great. We love having them for breakfast or in salads for lunch/dinner/supper. I wanted to try the avocado baked egg which I have seen on Pinterest quite a lot (it looked so attractive) so I made it for breakfast one morning.

After removing the seed from the avocado, you will need to scrape out some of the avocado flesh from the centre to accommodate the egg. It is better to use medium-sized eggs to avoid overspilling of the egg white or better still, I am thinking of using quail's eggs the next time as I think it will fit snugly into the avocado halves. Then, just season with salt and pepper and bake in a preheated oven for 10-12 minutes until the egg white has set and the yolk still slightly runny.


The scraped out avocado is mashed roughly with a fork, seasoned with salt and pepper and then some chopped cherry tomatoes are added to the mix.

So what did I think of the avocado baked eggs? For me personally, I prefer the texture and taste of uncooked avocado compared to a baked one,  nevertheless this is worth trying. I have to say it certainly looked very attractive on the plate. The eggs were nicely cooked with a runny yolk, so that was a bonus. I really enjoyed the mashed avocado - it tasted great and also a lot less work than baking the avocado.



Avocado baked eggs & Mashed avocado

Preparation time: 5-10 minutes
Cooking time: 10-12 minutes
Serves 2

Ingredients
2 avocado
2 eggs
Salt and freshly ground pepper
Dill
1/2 lime

For the mashed avocado
Avocado, scraped from Step 3
2 cherry tomatoes, finely chopped
Salt and freshly ground pepper

1. Preheat oven to 180°C (no fan).

2. To pit the avocado, first you need to find the stalk and remove it. Hold it horizontally, with a knife through the centre until you hit the seed then move the knife in a circular motion until you go all the away around. Twist the avocado halves in opposite direction and it will come apart easily into 2 halves. Sink the knife into the avocado seed and remove. If not using immediately, sprinkle the avocados with some lime juice to avoid discolouration.

3. You are now left with the hollowed out avocado halves, however you may need to scrape more avocado flesh out so that it is large enough to accommodate the liquid egg. If you can get your hands on quail's egg (which I will try next time) they should fit nicely in the avocado halves. I had to fit 1 egg into 2 halves. Season with salt and pepper.

4. Bake in a preheated oven for 10-12 minutes, until the egg white has set. Serve hot from oven, garnished with a sprig of dill.

5. While egg is cooking, prepare your mashed avocado. Using the avocado scraped out from Step 2, mash with a fork, and then add the cherry tomatoes and season with salt and pepper. Serve with toast.

  4. ooo, avocados and eggs, two of my favorite ingredients. i'd happily eat 10 of these, i think! maybe a sauce would also help punch up the flavor. maybe hollandaise, hmmm...
