Recipe: Oven-roasted Devilled Chicken Drumsticks (Delia Smith)

A few days ago, you saw Devilled Eggs on this blog and today I am sharing the recipe for Devilled Chicken Drumsticks. :D The term "devilled" refers to food that has been coated and cooked with hot seasoning; in this case mustard and paprika. Other ingredients in this devilling mixture is Worcestershire sauce, tomato puree, tomato ketchup, sugar and soy sauce.



I bought 6 pieces of chicken maryland (thigh & drumstick) last week, enough to make 2 Delia Smith recipes.  The drumstick was used to make this "Devilled Chicken Drumstick" and the thigh was reserved for this chicken cacciatore recipe. This is another EASY recipe, all you need to do is marinate the chicken for at least 3 hours (or you can do this the night beforehand) and cook on the grill or oven, depending on your preference.

You will need to watch the chicken if using a grill (keep an eye so that it doesn't brown too quickly and burn), so personally I prefer to use the oven as I can just pop it in and let it roast for 25-30 minutes, until it is cooked. As expected, the chicken was very flavorful and moist but not too spicy so even the kids could enjoy this. If you want it to be spicier, you can substitute paprika with cayenne pepper or hot pepper powder. I served the Devilled Chicken Drumsticks with my "Nutty Salad" - another fantastic dinner!


Devilled Chicken Drumsticks with "A Nutty Salad"



Oven-roasted devilled chicken drumsticks
Recipe adapted from Delia Smith
Preparation time: 5 minutes
Cooking time: 30 minutes
Serves 3

Ingredients
6 chicken drumsticks
2 tbsp Worcestershire sauce
1 tbsp tomato puree
1 tbsp tomato ketchup
1 tsp English mustard
1 tsp French mustard
1 tsp brown sugar
1 tsp soy sauce
1 tsp paprika
1 tbsp olive oil
Freshly ground black pepper

To garnish
1 spring onion, finely chopped

1. Using a skewer or sharp knife, stab the drumsticks in several places. Place chicken in a tupperware or large bowl.

2. In a mixing bowl, combine all the remaining ingredients together and stir thoroughly until smooth. Pour this mixture over the chicken and turn the pieces around in it. 

3. Leave, covered with foil or cover in the fridge for at least 3 hours or much longer if you like (I left it for 6 hours). 

4. Original recipe: Arrange the chicken drumsticks in a single layer in the grill pan with the grid removed. Preheat the grill and grill the chicken for about 15-20 minutes, or until the drumsticks are cooked. Keep turning them fairly frequently to prevent them from burning, and serve very hot with any pan juices spooned over. 

5. Baby Sumo's Method: Preheat oven to 200°C. Place the chicken drumsticks in a baking tray in a single layer and roast for 25-30 minutes or until the drumsticks are cooked. Serve hot with a side salad.

    Funny that I'm attracted to food being deviled... must be something "naughty" to me - LOL! Indeed, these drumsticks look very flavoursome and delicious!

    With 1 tsp of paprika, these drumsticks will not too spicy at all for me and my husband but reckon my son will be winching - LOL!
