Recipe: Roasted Bananas with Honey, Lime, Nuts and Dried Fruits

Roasted bananas are one of the healthiest (sweet) treats you can give your child. Bananas are high in vitamin B6, vitamin C, manganese, potassium and fibres. As you all know, bananas get sweeter the riper it gets and roasting bananas also have this same effect - the bananas become much more moist and sweet.

My kids will get a cough when they eat too much raw bananas, but no such problems when I give them roasted bananas. Since they love bananas so much, this is one of the best, simplest ways I can think of serving to them (other than banana cakes and loafs). It is so easy that I can serve this in under 10 minutes.



The bananas are simply roasted for 8-10 minutes in the oven, with their skin on, and then drizzled with some honey. You can then top the bananas with nuts of your choice as well as dried fruits such as raisins, sultanas or cranberries. I sometimes serve it with whipped cream or Mock Devonshire cream, but if you want a fat-free dessert, feel free to skip the cream as it is good as it is. However, do not skip the lime - I feel a squeeze of lime makes it all the more refreshing and appetizing.

Roasted bananas with honey, lime, nuts and dried fruits
Recipe by Baby Sumo
Preparation time: 2 minutes
Cooking time: 8-10 minutes
Serves 4

Ingredients
4 large bananas, skin-on
1/8 tsp freshly grated nutmeg
1/4 tsp ground cinnamon
2 tsp honey
1 lime, quartered
Almond flakes
Walnuts
Dried cranberries (or raisins/sultanas)

To serve
60g whipped cream or Mock Devonshire cream
Mint sprig, to garnish

1. Preheat oven to 180°C/350°F.

2. Slice each banana into half (do not remove the skin). Place in a ovenproof dish or baking tray, flesh-side up. If it doesn't fit in one dish, then use another dish. Sprinkle on the nutmeg and cinnamon.



3. Place in preheated oven and bake for 8-10 minutes. The skin will turn black (this is normal).

4. For kids, you can get creative and make a smiley face for them. Place a banana on a round plate (for the smile), lime as the nose and two walnut pieces as the eyes. Drizzle some honey over the baked banana and sprinkle some almond slivers and dried cranberries. Finally, place the whipped cream in a piping bag and draw a zig-zag on top of the walnut pieces for the hair.




5. For the adults, place the baked banana on a serving plate and drizzle with honey, sprinkle with almonds and dried cranberries. Serve the quartered lime on the side with some walnuts and whipped cream, garnished with a mint sprig. Before eating, squeeze the lime over the bananas.

    Will try this for a change tomorrow instead of the usual banana cake. A neighbour gave us a wee too much pisang berangan from his farm for 2 humans and 1 furkid.
